The objective of the present paper is to review the methods of measuring micronutrient intake adequacy for individuals and for populations in order to ascertain best practice. A systematic review was conducted to locate studies on the methodological aspects of measuring nutrient adequacy. The results showed that for individuals, qualitative methods (to find probability of adequacy) and quantitative methods (to find confidence of adequacy) have been proposed for micronutrients where there is enough data to set an average nutrient requirement (ANR). In an effort to elucidate the mechanism of liver damage resulting from Hepatitis A virus (HAV) infection, we have studied infected skin fibroblasts and autologous lymphocytes from HAV patients. We report here that HLA-restricted virus-specific T cells play an essential role in HAV-related hepatocellular injury.
Acceptability of partially dealcoholized wines - Measuring the impact of sensory and information cues on overall liking in real-life settings

International audience; In this study, the effect of partial alcohol reduction in wine on consumer expectation and overall liking was investigated in real-life settings (by a Home-Use-Test). By varying the wine in the bottle and by manipulating the information on the label, it was possible to assess the relative impact of sensory properties and information cues on overall liking. Standard Chardonnay and Syrah wines were partially dealcoholized from about 13.5% to about 9.5%. Research report; International audience; Associative learning contributes crucially to adjust the behavior of neonates to the permanently changing environment. In the European rabbit, the mammary pheromone (MP) excreted in milk triggers sucking behavior in newborns, and additionally promotes very rapid learning of initially neutral odor cues. Such stimuli become then as active as the MP itself to elicit the orocephalic motor responses involved in suckling. The aim of this thesis was to investigate the impact of the volatile odorant fraction and the non-volatile fraction on the perception of caramel flavour. The first step focused on the analytical characterization of the volatile odorant fraction of caramel using Gas Chromatography coupled to Olfactometry (GC/O), GC/Mass Spectrometry (GC/MS) and heart-cutting MDGC/MS/O. Results highlighted the presence of more than one hundred compounds and demonstrated the complexity of the caramel volatile fraction. Identification and quantitation of tocopherols, carotenoids and triglycerides in edible Pistacia lentiscus oil from Tunisia

International audience; The fruits of Pistacia lentiscus are a source of a fixed oil used in some forested areas for culinary purposes and in traditional medicines. The aim of this study was to evaluate the levels of tocopherols, carotenoids and triglycerides in this oil using high-performance liquid chromatography (HPLC). The results demonstrated the presence of two vitamin E isomers; α- and γ-tocopherols, at respective concentrations of 119 mg and 23 mg per kg of oil. β-carotene, lutein and zeaxanthin were the principal carotenoid molecules identified. β-carotene was the main molecule present, with a level of 6.13 mg/kg oil.
