Mercury and selenium in fish and shellfish: Occurrence, bioaccessibility and uptake by Caco-2 cells

This study evaluates Hg and Se concentrations and bioaccessibility (element solubilised after simulated gastrointestinal digestion) in 16 raw seafood species consumed in Spain. The concentrations varied greatly (Hg, 3.8-1621 ng/g wet weight, ww; Se, 84-1817 ng/g ww). Only one sample of swordfish exceeded the Hg limit permitted in Spain (1mg/kg), and for this sample the Hg/Se molar ratio and Se Health Benefit Value food safety criteria also indicated the presence of a risk. In the processes of embellishment or reconstruction of the Benedictine churches in southern Italy and in Sicily, during the sixteenth century, great care was put in equipping them with magnificent wooden choirs. This contribution retraces an artistic journey that from the abbey of San Martino delle Scale, near Palermo, passing through the complex of SS. Severino and Sossio in Naples, goes back to the abbey of Montecassino. The interactions between plants and soil microorganisms are mainly based on trophic relationships. The compounds exchanged represent cost for the organism produces them but a benefit for the one who receive those compounds. A mutualistic relation leads to stability in the cost-benefit balance resulting from a co-evolution between the two organisms. The cost corresponding for the release of carbon compounds by the plant would be offset by benefits in return corresponding for the activities of microorganisms that use them. Il saggio prende spunto dalla parabola evangelica del grano e della zizzania, per una riflessione sul rapporto tra principio del bene e impronta dell’ambiguo. In dialogo critico con la “saggezza dell’incertezza” (M. Kundera) e attraverso riferimenti a Kant, Nietzsche e alla sensibilità etica post-moderna, ci si domanda se le chances e i rischi che comporta l’ambiguità insita nella condizione esistenziale lascino riconoscere il senso inequivocabile e incondizionato di un dono che interpella. Ovvero un attestarsi del bene di cui l’ambiguo è via di conferma senza potersene fare misura.
