This work devoted to study various parameters influencing hydration of silicate phase main Ordinary Portland Cement (OPC) was performed at the Laboratoire Interdisciplinaire Carnot de Bourgogne (ICB). This study is part of the project "Crystal Growth Control" initiated by BASF in order to monitor and provide the best as possible the hydration of Ordinary Portland Cement. β-cyclodextrin, like other carbohydrates has a tendency to adsorb water molecules and the properties are attributed to the hydroxyl groups in the molecules. β-cyclodextrin, the cyclic oligomer of glucose has a hydrophobic interior and hydrophilic exterior. The cyclic structure favours the formation of hydrogen bonds between the OH groups on the adjacent glucose units and affects the formation of hydrogen bonds with water molecules. The hydoxyl groups engaged in hydrogen bondings can be eliminated at high temperatures and the adsorption properties of the dehydrated β-cyclodextrin will depend on the new functional groups formed. In this work, an immobilization method for polymer-levan production by a non-flocculating Z mobilis culture was developed. The extent of cell attachment to the stainless steel wire surface, culture growth and product synthesis were described. It was established that during short-term passive immobilization of non-flocculating Z mobilis cells on a stainless steel wire surface, sufficient amounts of biomass for proper levan and ethanol fermentation could not be obtained. In this thesis I study, by means of neutron scattering, calorimetry, and dielectric spectroscopy, the physical origin of protein dynamical transition (PDT) which is usually observed at ~230 K in protein hydrated powders and is deemed necessary for protein function. Measurements reported in this thesis have been performed on hydrated powders of Myoglobin. The combined use of different experimental techniques gives a coherent description of the PDT and reveals a connection with a liquid-liquid crossover occurring in the protein hydration water at about the same temperature.
