On the significance of molecular surfaces and thermodynamic interactions for the excess viscosities of liquid mixtures

The viscosities η of homogeneous binary mixtures of liquids are usually approximated as In η = ϕ1 In η1 + ϕ2 In η2 where ϕi and ηi are the volume fractions and the viscosities, resp., of the i-th pure substance; the behavior of real systems is then discussed in terms of Δ In η, the deviations from the above reference behavior. Here a semi-empirical approach is presented according to which volume fractions are replaced by the surface fractions Ωi to create a more realistic reference state, and the thermodynamic interaction parameter g is taken into account. Influence of the electrical interface properties on the rheological behavior of sonicated soy lecithin dispersions

A significant effect, on the rheological behavior, due to the electrical properties of vesicles formed from concentrated soy lecithin dispersions have been studied in this work. The rheopectic behavior of concentrated soy lecithin dispersions (120, 150, 180, 210 and 240 g L−1) prepared by swelling–light sonication–freezing–unfreezing procedure is studied and it is specially emphasized on the transition under steady shear from lamellar phase of planar sheets to closed structures as multilamellar vesicles. Binding of Na+ ions to proteins: Effect on taste perception

Abstract This study investigated the relationship between the ionic binding of sodium and salty perception in protein matrices. Protein type (i.e. gelatin, milk protein and soy protein), protein concentration and pH were varied to obtain matrices with distinct compositions and rheological properties. 23Na NMR spectroscopy was used to determine the ratio of sodium ions bound to proteins and the mobility of sodium ions. Computer simulations of fluids in thermal equilibrium can yield information on transport coefficients such as self—diffusion and interdiffusion coefficients, viscosity, and thermal conductivity. While the estimation of self—diffusion coefficients from the mean square displacements of the respective particles is rather straightforward, the estimation of other transport coefficients is less straightforward, and can be based on either an analysis of time correlation functions of the appropriate collective variables, or on nonequilibrium techniques where the linear response to appropriate perturbations is measured.

RHEOLOGICAL BEHAVIOUR OF MICROCRYSTALLINE CELLULOSE HYDROGELS

ABSTRACT An extensive study was made of the rheological behaviour of microcrystal1ine cellulose-sodium carboxymethyl cellulose (MCC-NaCMC) gels at six different concentrations. The effect of agitation time, storage time, shear rate and temperature on the viscosity of these thixotropic gels was analysed, over 7200 resulting values of being available to this effect The pseudoplastic and thixotropic characteristics of the gels was established and a progressive decrease in gel viscosity with increasing storage time was observed, although retaining stability. On the other hand, constant agitation for five minutes was found to reduce gel viscosity by 40 to 50%, regardless of concentration.

With reference to a metallic alloy, the attribute thixotropic is utilized to indicate the behaviour of it in the semi-solid state when its microstructure consists of spheroids in a liquid matrix. Such alloys are characterized by very low values of viscosity under shearing stress in the semi-solid state, while after solidification they show relevant mechanical properties. In vivo and in vitro degradation of a novel bioactive guided tissue regeneration membrane

The aim of this study was to assess degradation of a novel bioactive guided tissue regeneration (GTR) membrane and to quantify the concurrent tissue responses. Pieces of membrane composed of poly-l-lactide, poly-d,l-lactide, trimethylenecarbonate and polyglycolide were dipped into an N-methyl-2-pyrroline (NMP) solution and implanted in the mandibles of 10 sheep. The animals were sacrificed at 6-104 weeks. Parallel in vitro degradation was analysed by measuring the inherent viscosity, water absorption and remaining mass.
