Occurrence and risk assessment of mycotoxins, acrylamide, and furan in Latvian beer.

This work reports data on the occurrence of nine mycotoxins and two food processing contaminants - acrylamide and furan - in a total of 100 beers produced in Latvia. Mycotoxins were detected by high-performance liquid chromatography (HPLC) coupled with time-of-flight mass spectrometry, acrylamide by HPLC coupled with quadrupole-Orbitrap mass spectrometry, and furan by headspace gas chromatography-mass spectrometry. The most frequently occurring mycotoxins were HT-2 and deoxynivalenol (DON), which were detected in 52% and 51% of the analysed samples. Inhibition of induced DNA oxidative damage by beers: correlation with the content of polyphenols and melanoidins.

Beers are a source of dietary flavonoids; however, there exist differences in composition, alcohol concentration, and beneficial activities. To characterize these differences, three kinds of lager beer of habitual consumption in Spain, dark, blond, and alcohol-free, were assayed for total phenolic content, antioxidant activity, superoxide and hydroxyl radical scavenging activities, and in vitro inhibitory effect on DNA oxidative damage. A new automated single ring infiltrometer for Beerkan infiltration experiments

A new automated compact device was developed to collect data from single ring infiltration experiment. The infiltrometer consists of a containment ring in which a small quasi-constant head of water (i.e. a few mm) is maintained by a Mariotte reservoir and a very inexpensive data acquisition system, based on the open source microcontroller platform Arduino, and a differential pressure transducer. The design can easily be reproduced and operated. The infiltrometer was tested in a citrus orchard on a sandy loam soil. Yeasts involved in the spontaneous fermentation of traditional beverages like chicha (indigenous Andean beer) may have the potential to be used as starter cultures to improve the quality and microbiological safety of these products, but also as non-conventional alternatives to other food alcoholic fermentations. Abstract Interpreting and simulating hydrological processes need a large number of field saturated soil hydraulic conductivity, Kfs , data that should be collected with simple and rapid field experiments. Matching beer with food : pairing principles, underlying mechanisms and a focus on aromatic similarity

Pairing between beer and dishes emerges as a new trend in France. Beer promoters or gastronomy professionals need to offer high-quality advices in terms of beer and food pairing to their customers. Within this context, the objective of the research was to identify pairing principles and to better understand the underlying perceptual mechanisms. Determinants of food and beverage pairing were first analysed from experts’ discourses. Results showed that food and beverage pairings are governed by perceptual, conceptual and affective features, related to physio-chemical, perceptual and cognitive processes. Effect of a Heavy Rainstorm on the Surface Hydrodynamic Properties of a Sandy-Loam Soil

Changes in surface-soil hydrodynamic properties associated with torrential natural rainstorms are largely unknown. This investigation aimed at verifying if the surface hydrodynamic properties of a sandy-loam soil varied due to the heavy rainfall event (130 mm in nearly three hours) that occurred in the summer of 2020 at Palermo (Italy) and also to establish if soil recovery processes occurred soon after the event. A test of water pouring height and run intermittence effects on single-ring infiltration rates

Assessing how the infiltration process depends on the water impact energy improves interpretation of hydrological processes. Impact energies vary with the height of water pouring; that is, the distance between the water delivery point and the soil surface. The effects of the height of water pouring on infiltration in an initially near saturated soil can be tested in the field by two repeated Beerkan infiltration runs separated by a short pause (30 min) and using both low (non-perturbing) and high (perturbing) heights of water application.
