A study on texture-taste-aroma interactions: physico-chemical and cognitive mechanisms

International audience; Texture–taste, texture–aroma and aroma–taste interactions were examined in custard desserts varying in viscosity (at identical composition), sucrose level and aroma nature. All reciprocal interactions were investigated, with each binary interaction addressed through an independent sensory study. Rheological, in vivo aroma release and sucrose release measurements were run in parallel to control for a possible physico-chemical origin of these interactions. Observed interactions were found to be dependent upon the nature of the sensory modalities involved; physico-chemical mechanisms could only in some instances entirely explain these interactions. This thesis is based upon the study of 160 000 animal bones issued from 23 late iron-age sites excavated in the Auvergne region of central France. The assemblages represent different types of archaeological contexts (farms, aristocratic settlements, agglomerations, oppida, religious/ritual zones and funeral areas) which enable us to study their role in the domestic, craft and sacrificial spheres. Capturing learning in classroom interaction in mathematics: Methodological considerations

International audience; This paper discusses issues of how to transcribe and analyze video-recordings when studying learning in small group work in mathematics. Since bodily features of interaction and the use of artefacts play important roles in mathematical reasoning, a multimodal approach to transcribing is necessary. Thus, the theoretical grounding for transcriptions has to be in accord with the perspective on learning adopted in the analysis. In the paper, the principles for studying what Radford (2000) refers to as knowledge objectification processes when learning mathematics will be discussed.
