Yeasts involved in the spontaneous fermentation of traditional beverages like chicha (indigenous Andean beer) may have the potential to be used as starter cultures to improve the quality and microbiological safety of these products, but also as non-conventional alternatives to other food alcoholic fermentations. Abstract In this chapter, we report on the diverse applications of silica-based nanomaterials relevant for the food industry. The encapsulation of food ingredients and nutraceuticals and their use as antimicrobial agents and sensors has been explored. In the case of food ingredients, controlled-release materials responsive to pH changes and enzymes (i.e., proteases or esterases) are the main approximation. For antimicrobial agents, the materials are able to modulate the activity of the biocide, increasing the duration of the active substances. Abstract The aim of this work was to investigate the potential of gas assisted mechanical expression (GAME) process as an innovative technology for oil extraction and polyphenol recovery from tiger nuts. GAME process was first studied by varying the supercritical carbon dioxide (SC-CO2) and the mechanical expression (ME) pressures (10–30 MPa), then was compared to separate processes applied alone, using either SC-CO2 or ME. The results showed that the better conditions for GAME were found using 20 MPa for SC-CO2 and 30 MPa for ME. The chromatographic determination of 15 polycyclic aromatic hydrocarbons (PAHs) in cookies has been improved in order to obtain a fast method with a low limit of detection through the combination of microwave-assisted extraction (MAE), oil saponification and solid-phase extraction clean-up before the injection of purified extracts in a C18 201TP52 (5 microm, 250 x 2.1 mm) column. Using acetonitrile-water as mobile phase, with a 50% to 95% w/w acetonitrile gradient for a fixed flow of 0.250 ml min(-1), 15 PAHs were separated in 45 min.
