Study and characterization of polyphenol oxidase from eggplant (Solanum melongena L.)
ABSTRACT: In this study the catecholase and cresolase activities of eggplant polyphenol oxidase (PPO) were investigated. Enzyme activity was determined by measuring the increase in absorbance using catechol as substrate and 3-methyl-2- benzothiazolinone hydrazone (MBTH) as coupled reagent. The effects of substrate specificity, heat inactivation, temperature, pH, and inhibitors were investigated to understand the enzymatic alteration of ready-to-eat preparations. Effect of Drying Condition on the Quality of Dry Late Peaches of Leonforte
The Late Peach of Leonforte [Prunus persica (L.) Batsch] grown in Southern Italy matures in September and October and as late as November. Fruits are wrapped in paper bags to protect them from parasites and are harvested only when fully ripe. Protected inside the bags, they ripen late and take on a bright yellow colour with red streaks. Highly aromatic, the peach has yellow, firm flesh that is high in soluble solids and has a distinctive, slightly caramelized flavour. At the crossroad of multiple pathways regulating trophism and metabolism, glycogen synthase kinase (GSK)3 is considered a key factor in influencing the susceptibility of neurons to harmful stimuli (neuronal resilience) and is a target for several psychiatric drugs that directly inhibit it or increase its inhibitory phosphorylation. Inhibition of GSK3 prevents apoptosis and could protect against the neuropathological processes associated with psychiatric disorders.
