Abstract Fumonisins (FBs) are toxins produced mainly by the molds Fusarium verticillioides (synonym Fusarium moniliforme ) and Fusarium proliferatum . These mycotoxins are contaminants of wheat, maize, maize-based foods and other grains worldwide. FB 1 , the most abundant and toxic metabolite, is known to cause a range of species-specific toxic responses. It has been associated with a high incidence of esophageal cancer in the Transkei region of South Africa and some provinces of China. In addition, FB 1 has been declared a class 2B carcinogen or “possibly carcinogenic to humans”. Detoxification of fumonisins by isothiocyanates
Survey of mycotoxins in dates and dried fruits from Tunisian and Spanish markets
Abstract In an effort to enforce the knowledge on mycotoxin occurrence and co-occurrence in dates and dried fruits, 228 samples purchased from Tunisian and Spanish markets were subjected to multi-mycotoxin liquid chromatography with tandem mass spectrometry (LC-MS/MS) analysis of 16 mycotoxins. At least one mycotoxin was detected in 160 samples (70%). The frequency of contaminated samples was 83%, 80%, 64%, 59% and 26% for dates, dried vine fruits, figs, apricots and plums, respectively but none of the analyzed samples contained detectable levels of fumonisins (FB1, FB2, FB3) or T-2 toxin (T2). Study of the chemical reduction of the fumonisins toxicity using allyl, benzyl and phenyl isothiocyanate in model solution and in food products
Abstract Fumonisins (FBs) are bioactive compounds produced by several strains of Fusarium spp. which contain a polyketide structure similar to sphinganine. These mycotoxins contain a free amino group that could work as an electron donor and react with the electrophile carbon present within the isothiocyanate (ITC) group. The objective of this study was to determine the effect of ITCs (allyl, benzyl and phenyl) on the stability of FB 1 , FB 2 and FB 3 . Firstly, PBS solutions at three pH levels (4, 7 and 9) were prepared and added with pairs of one FB (1 mg/L) plus one ITC (1 mg/L).
