Sugar citrate cometabolism in Leuconostoc mesenteroides. Bacteria from the genus Leuconostocplay roles in the dairy industry. The most important functions of this bacteria are their ability to produce CO 2 and flavour compounds through lactose heterofermentation and citrate uti- lization.
