This thesis is based upon the study of 160 000 animal bones issued from 23 late iron-age sites excavated in the Auvergne region of central France. The assemblages represent different types of archaeological contexts (farms, aristocratic settlements, agglomerations, oppida, religious/ritual zones and funeral areas) which enable us to study their role in the domestic, craft and sacrificial spheres. The aim of this thesis is to show the implications of animal use within the Gallic society.This thorough study also replaces the data into the chronological context of Gaul between the LaTèneien and Augustian periods, and the geographical territory of the Clermont-Ferrand Basin in the Limagne plain of the Auvergne.
