The main objective of this article is to examine the consumption of meat in the French dietary pattern. In particular, we attempted to identify the current structure and evolution in the consumption of meat-based products, the sociological distribution of the meat-based consumption, and the culinary systems of food association/substitution in which it occurs. In this aim, we analyzed the individual data of consumption stemming from nutritional surveys performed by the CRÉDOC in 1999 and 2003, as well as the recent European data about the national indigenous consumption of meats. Both samples included 1,500 representative individuals of the French adult population (quota method) who reported all their actual food consumptions over a period of one week. The data collected in these surveys tend to reveal (1) that the social segmentation of the meat-based consumption is more and more weak, and (2) the emergence and propagation of new dietary patterns in our country may contribute to explain the differences in the evolutions of the various meat-based products’consumption.
