A factory-scale application of secondary adjunct cultures selected from lactin acid becteria during Puzzone di Moena cheese ripening

The lactic acid populations of 2 seasonal Puzzone di Moena cheeses made from winter and summer raw cow's milk were characterized at different ripening times. Lactic acid bacteria (LAB) were isolated on selective media and subjected to genetic typing and identification. The species most frequently found during ripening were Lactobacillus paracasei ssp. paracasei, Lactobacillus plantarum, and Pediococcus pentosaceus. The Association between Cardiorespiratory Fitness and Gut Microbiota Composition in Premenopausal Women

Abstract The aim of this study was to investigate the association between cardiorespiratory fitness and gut microbiota composition in premenopausal women. The participants consisted of 71 premenopausal Finnish women (aged 19–49 years). Gut microbiota were analyzed using flow cytometry, 16S rRNA gene hybridization and DNA-staining. Maximum oxygen uptake (VO₂ₘₐₓ) was assessed by respiratory gas analyzer and body composition by Bioimpdance. We found that participants with low VO₂ₘₐₓ had lower Bacteroides, but higher Eubacterium rectale-Clostridium coccoides than the high VO₂ₘₐₓ group (p < 0.05 for all). ABSTRACT Bacillus subtilis 168 is resistant to phenolic acids by expression of an inducible enzyme, the phenolic acid decarboxylase (PadC), that decarboxylates these acids into less toxic vinyl derivatives. In the phenolic acid stress response (PASR), the repressor of padC , PadR, is inactivated by these acids. Inactivation of PadR is followed by a strong expression of padC . In the present paper we set up a connection between the indices of the Tits algebras of a simple linear algebraic group $G$ and the degree one parameters of its motivic $J$-invariant. Our main technical tool are the second Chern class map and Grothendieck's $\gamma$-filtration.
