Physicochemical Interactions Between Aroma Compounds and Milk Proteins: Effect of Water and Protein Modification

The physicochemical interactions between aroma compounds and sodium caseinate were studied by complementary techniques involving the protein in aqueous solution at 25 or 75 g/L (exponential dilution and equilibrium dialysis) or in a solid state (sorption and infrared spectroscopy). No retention of acetone, ethyl acetate, and 2-propanol in aqueous solutions was found by exponential dilution and equilibrium dialysis. Diacetyl and benzaldehyde interacted with sodium caseinate through strong and weak bonds, as found by equilibrium dialysis. Abstract Vanadium oxide supported on calcined hydrotalcite has been investigated for the oxidehydrogenation of n-butane in the 500–550°C temperature interval. Hydrotalcite (Mg/Al atomic ratio of 2.77), consisting of a single phase only, has been employed as a support precursor. The vanadium catalysts (0–50, referred as wt.-% V 2 O 5 ) were prepared by impregnation of calcined hydrotalcite (450°C) with ammonium metavanadate (in an aqueous solution) or vanadyl acetylacetonate (in a methanolic solution), and then calcined at 600°C for 4 h. Micellar structures of amphiphilic poly(1,2-butadiene)-block-poly(ethylene oxide) diblock copolymers have been crosslinked in aqueous solution by γ-irradiation. By transmission electron microscopy (TEM) of neganively stained specimen it is shown that the precominant structures present are sopolymer sesicles (which appear to be double latered. The solubility of nine aroma compounds (acetone, 2-butanone, 2-hexanone, 2-octanone, ethyl acetate, ethyl butanoate, ethyl hexanoate, n-hexanal, and n-hexanol) in both water and various aqueous solutions was measured at 25 °C using the mutual solubility method. The aqueous solutions consisted of sucrose, glucose, sorbitol, glycerol, polyethylene glycol 200, or maltodextrins at different concentrations. Aroma solubility in water decreased with increased hydrophobicity. For aroma molecules which have the same number of carbon atoms in their structure, aqueous solubility decreased as follows: aldehyde > methyl ketone > alcohol > ethyl ester. The chemical composition of the essential oil obtained from the flowers of Otanthus maritimus L., a perennial plant growing wild in maritime sands in the Mediterranean region, was investigated by GC and GC-MS analyses. Totally 66 were identified. The oil was dominated by the high content of monoterpene compounds, especially oxygenated monoterpenes which accounted for 73.1%. The most abundant components were yomogi alcohol (20.8%), camphor (15.8%), artemisyl acetate (15.3%) and artemisia alcohol (13.7%). Abstract Laboratory experiments are described where the effects of turbulence on the impaction scavenging of aerosol particles by water drops were investigated. During the experiments the drops were freely suspended at their terminal velocities in the Mainz vertical wind tunnel. Turbulence in the tunnel airstream was produced by placing a needle obstruction upstream of the floating drop. The energy dissipation rates e were between 0.03 and 0.5 m2 s−3. The power spectrum covered a range of k values between 102 and 3 × 103 m−1, agreeing with atmospheric observations within this range. 1. Longitudinal muscle strips of the guinea-pig ileum were incubated in Tyrode solution containing either DFP or physostigmine as cholinesterase inhibior. After a 90 min preincubation period the acetylcholine resting release into the medium was determined. Acetylcholine was estimated by gas chromatography. 2. The resting release was 0.39 nmol/g×min irrespective of the cholinesterase inhibitor used. In the presence of hexamethonium, or after omission of external calcium, the resting release fell by 50 and 55%, respectively. 3. 1. The effects of oxotremorine and atropine on the release of acetylcholine from longitudinal muscle strips of the guinea-pig ileum stimulated at frequencies between 0.1 and 3 Hz in the presence of eserine were investigated. In control experiments the acetylcholine output per stimulus declined with increasing frequencies of stimulation. 2. Oxotremorine inhibited the release of acetylcholine in a concentration-dependent fashion. At a concentration of 10−6 M oxotremorine, the release evoked by 0.1 Hz was reduced by 54%.
