The aim of this study was to evaluate the use of Formagraph to determine the milk clotting activity of animal Sicilian rennet pastes. Clotting time (r), curd firming time (k20) and curd firmness (a30) were measured during coagulation tests carried out with pasteurized cows’ milk. The rennet paste samples were collected in 11 dairy factories located throughout western Sicily. The factories produce two different pasta-filata cheese typologies, Caciocavallo Palermitano and PDO Vastedda della valle del Belìce, made with cows raw milk and ewe raw milk, respectively. Unwanted mental intrusions (UMIs) and their functional consequences had been proposed as symptom dimensions in current cognitive models of Obsessive-Compulsive Disorder (OCD), Body Dysmorphic Disorder (BDD), Illness Anxiety/Hypochondriasis (IA/H) and Eating Disorders (EDs). Abstract Background In contrast to earlier assumptions, there is now mounting evidence for the role of tundra soils as important sources of the greenhouse gas nitrous oxide (N2O). However, the microorganisms involved in the cycling of N2O in this system remain largely uncharacterized. Contrariamente alle opinioni precedentemente proposte in dottrina, si dimostra come l'agere pro tutela coincidesse con l'agere del tutor ad litem nei casi di oblatio litis ovvero, anteriormente al I sec. d.C., nelle ipotesi di infantia del pupillo o di assenza del pupillo o della mulier.

The increasing request for classic foods has led to a higher demand for cheeses enjoying a “recognition of quality” status. This phenomenon has also affected Sicilian dairy products, in particular protected designation of origin (PDO) “Vastedda della valle del Belìce” (VdB), a cheese traditionally available only during the summer season, but requested year round.
