This research work has been developed in the context of the potencial applications of essential oils as multi-target compounds for novel food safety strategies, such as active packaging technologies. Essential oils are aromatic oils derived from plants and usually extracted by hydrodistillation when intended to be used in food. There is an increasing interest in the antimicrobial properties of essential oils due to the possibility of using them to replace ‘synthetic’ preservatives in food or, in general, to reduce viable numbers of pathogens along the food chain.

This study focused on their capability to sorbed/retain aroma compounds (1-hexanal, 2-hexen-1-ol, 1-hexanol, 3-hexanone and phenol) at three relative humidity level (≤2%, 53% or 84% RH). Whatever the relative humidity condition, the order of sorption is keton (3-hexanone) < aldehyde (1-hexanal) < aliphatic alcohols (2-hexen-1-ol and 1-hexanol) < phenol. Films were cast from heated (70 °C for 20 min) alkaline (pH=10) aqueous solutions of 7 % soy protein isolate containing 50 % (by mass) glycerol as a plasticizer and different levels of added oxidized starch (0, 5, 10, 15, and 20 %, by mass). Nyiragongo is an active intraplate volcano well known for its fascinating persistent lava lake inside the crater and is recognized as one of the most dangerous volcanoes in the world as more than two million people live on its slopes, 18-25 km far from the main crater. It is located in the Virunga Volcanic Province (VVP), in the western branch of the East African Rift System (EARS), at the intersection between the Democratic Republic of Congo, Rwanda, and Uganda.
