Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). The present study was aimed to evaluate the agronomic behavior of different rootstocks, recently licensed by the Dipartimento di Coltura e Difesa delle Specie Legnose of the University of Pisa, and tested in a high density planting system (2220 trees/ha). Dielectric Characterization of Fruit Nectars at Low RF Frequencies

Dielectric properties of apple, apricot, peach, and pear nectars were studied in the frequency range from 15 kHz to 30 MHz and the temperature range from 25 to 60 degrees C. Both the relative dielectric constants and the dielectric loss factors decreased by increasing frequency and increased linearly with increasing temperature with values in the order 10(4)-10(2) and 10(5)-10(2), respectively. The power dissipation densities and the power penetration depths were found to increase linearly with temperature. Molecular analysis of the fungal microbiome associated with the olive fruit fly Bactrocera oleae

Abstract A molecular approach was used to investigate the fungal microbiome associated with Bactrocera oleae a major key pest of Olea europea , using the ITS2 region of the ribosomal DNA (rDNA) as barcode gene. Amplicons were cloned and a representative number of sequenced fragments were used as barcode genes for the identification of fungi. The analysis of the detected sequence types (STs) enabled the identification of a total of 34 phylotypes which were associated with 10 fungal species, 3 species complexes and 8 genera. Comparative study on the quality characteristics of some Egyptian mango cultivars used for food processing

This study aims to investigate the physical, chemical, rheological and sensorial properties of six common mango (Mangifera indica) cultivars in Egypt. These common cultivars were Alfonse, Sedeka, Awis, Sinara, Sukari and Zibdia. Weights of mango fruits ranged between 246.6 and 549.2 g. The highest significant value of sphericity was in Alfonse fruits (0.82), whereas the lowest value was 0.58 in Sinara fruits. The highest firmness value was 29.51 N in Sedeka fruits. The highest elasticity was 1.16 N/mm for Sukari fruits. Identification of Phytophthora species infecting citrus in Vietnam

In a survey aimed at identifying Phytophthora species infecting fruit crops in Viet Nam, P. citrophthora and P. nicotianae were the species most commonly recovered from soil and trees in citrus plantations. P. nicotianae was prevalent in citrus groves in the Ben Tre and Tien Giang provinces (southern Viet Nam). Interestingly, both A1 and A2 mating types of the latter species were found, while in other citrus-growing areas of the world, such as the Mediterranean region, South Africa, Australia and the Americas, A1 is the only mating type occurring in citrus groves, suggesting southern-east Asia could be a centre of origin of this Phytophthora species. Effect of rootstock on growth, yield and fruit characteristics in cv 'Bianca' pistachio (Pistacia vera L.) trees

This paper, following preliminary field evaluation trials started in 1993, reports a study on the effect of eight different in vitro-propagated clonal rootstocks (P. atlantica and P. integerrima) and one seedling rootstock (P. terebinthus) on the vegetative and productive behaviour of pistachio cultivar 'Bianca'. The trees, budded in 1991, were grown using standard cultural practices for dry-land farming in a sandy clay loam soil, located inland in Sicily.
