How subtle is the "terroir" effect? Chemistry-related signatures of two "climats de Bourgogne".
2014
The chemical composition of grape berries is influenced by various environmental conditions often considered to be representative of a "terroir". If grapes from a given terroir are assumed to reflect this origin in their chemical compositions, the corresponding wine should also reflect it. The aim of this work was therefore to reveal the "terroir" expression within the chemodiversity of grapes and related wines, using ultrahigh-resolution mass spectrometry. Grapes and corresponding wines, from two distinct - though very proximate - terroirs of Burgundy were analyzed over three vintages (2010, 2011 and 2012). Ultrahigh-resolution mass spectrometry and ultra-high performan…
Exploring the yeast biodiversity of green table olive industrial fermentations for technological applications
2011
In recent years, there has been an increasing interest in identifying and characterizing the yeast populations associated with diverse types of table olive elaborations because of the many desirable technological properties of these microorganisms. In this work, a total of 199 yeast isolates were directly obtained from industrial green table olive fermentations and genetically identified by means of a RFLP analysis of the 5.8S-ITS region and sequencing of the D1/D2 domains of the 26S rDNA gene. Candida diddensiae, Saccharomyces cerevisiae and Pichia membranifaciens were the most abundant yeast species isolated from directly brined Aloreña olives, while for Gordal and Manzanilla cultivars th…
Wind Shear On-Line Identification for Unmanned Aerial Systems
2014
An algorithm to perform the on line identification of the wind shear components suitable for the UAS characteristics has been implemented. The mathematical model of aircraft and wind shear in the augmented state space has been built without any restrictive assumption on the dynamic of wind shear. Due to the severe accelerations on the aircraft induced by the strong velocity variation typical of wind shear, the wind shear effects have been modeled as external forces and moments applied on the aircraft. The identification problem addressed in this work has been solved by using the Filter error method approach. An Extended Kalman Filter has been developed to propagate state. It has been tuned …

Molecular Identification and Characterization of Wine Yeasts
2011
The transformation of grape must into wine is a complex microbiological process involving the sequential growth of bacteria and yeasts, although only the yeasts are responsible for alcoholic fermentation. In the past, winemaking was purely empirical, but it is now a well-understood, controlled process that has been gradually improved over time. Advances have largely been made possible by the development of molecular techniques to identify and characterize wine yeasts based on analysis of their DNA. These methods are rapid, reproducible, and sensitive, and continue to be used for a variety of purposes, such as analyzing variation in naturally occurring and inoculated yeast populations, monit…
Writer identification for historical handwritten documents using a single feature extraction method
2020
International audience; With the growth of artificial intelligence techniques the problem of writer identification from historical documents has gained increased interest. It consists on knowing the identity of writers of these documents. This paper introduces our baseline system for writer identification, tested on a large dataset of latin historical manuscripts used in the ICDAR 2019 competition. The proposed system yielded the best results using Scale Invariant Feature Transform (SIFT) as a single feature extraction method, without any preprocessing stage. The system was compared against four teams who participated in the competition with different feature extraction methods: SRS-LBP, SI…

Development of the ETOC : a European test of olfactory capabilities
2003
A number of smell tests designed to evaluate human olfactory capabilities have been published, but none have been validated cross-culturally. The aim of this study was therefore to develop a reliable and quick olfactory test that could be used to evaluate efficiently the olfactory abilities of a European population. This test, named ETOC and based on a combination of a supra-threshold detection task and an identification task, was designed to be a cross-cultural tool that would measure the decline in olfactory performance with ageing. Two versions of the ETOC, one easy and one less easy, were used to test the olfactory performance of European citizens in three countries (France, Sweden and …
Could a sensory education improve taste identification, willingness to taste vegetables and food memory in 5 to 7 years-oldchildren?
2013
Résumé 1 p. ; http://www.pangborn2013.com/; International audience; The first objective of this study was to characterise children according to their ability towards taste identification, their willingness to taste usually disliked vegetables and their ability to memorize food previously eaten. Those aspects are assumed to be important in overall food behaviour in children. Three tests for measuring these aspects in 5-7 years-old children were designed. These 3 tests were taken by 160 children aged 5 to 7. First results revealed that children were able to identify 37%, 34%, 29%, 26% and 22% of respectively sweet, salty, umami, bitter and sour taste. One half of children were not willing to …
Relative age effect among French swimmers
2022
