How does taste influence food preferences and food intake in early childhood?

Humans are born with very few flavor preference. The most consistent observations concern taste: newborns exhibit an early attraction for the sweet taste, in opposition to the avoidance of the bitter taste. Odor preferences are less obvious and are generally related to prenatal learning and/or have biological relevance (Schaal, 2006). On the one hand, a choice situation gives an individual a sense of freedom, autonomy and control over the environment, which triggers higher intrinsic motivation and higher satisfaction (Deci and Ryan, 1985). Indeed, it has been demonstrated that a choice situation elicits higher food intake in a meal context (Rohlfs Domínguez et al., 2013; Parizel et al., 2015). The Norwegian authorities started a nationwide free school fruit program in 2007, implemented in all secondary schools (grades 8–10) and combined schools (grades 1–10) in Norway. The program ended in 2014. This study evaluates the effect of ending the nationwide free school fruit program on the consumption of fruit, vegetables, and unhealthy snacks among Norwegian sixth and seventh graders. The study sample consists of pupils at 18 schools that participated in all data collections in the Fruits and Vegetables Make the Marks project (FVMM), initiated in 2001, with new data collections in 2008 and 2018.
