Persistence of a mixed lactic acid bacterial starter culture during lysine fortification of sourdough breads by addition of pistachio powder

Abstract Pistachio powder was added to flour or semolina to evaluate its contribution to increase the amount of lysine in bread. Bread production was carried out by sourdough technology using a selected 3-species (Lactobacillus sanfranciscensis/Leuconostoc citreum/Weissella cibaria) lactic acid bacterial (LAB) starter culture. All sourdoughs were subjected to a long-time fermentation (21 h) and showed levels of LAB around 109 CFU/g, indicating the suitability of pistachio powder for lactic fermentation. Globins are haem-proteins that bind O2 and thus play an important role in the animal's respiration and oxidative energy production. However, globins may also have other functions such as the decomposition or production of NO, the detoxification of reactive oxygen species or intracellular signalling. Effect of a physical pre-treatment and drying on carotenoids of goji berries ( Lycium barbarum L.)

In order to evaluate the influence of an abrasive pre-treatment and drying at 50 °C, 60 °C, 70 °C of goji fruits (Lycium barbarum L.), changes in colour and carotenoids were studied. An extraction method was modified and adapted to assay the main carotenoid esters and saponified carotenoids of goji berries, before and after treatments. Goji berries were confirmed as a high source of zeaxanthin, with zeaxanthin-dipalmitate at about 2 g/kg dry weight. The reliability of the analytical method was confirmed by the high quantitative recoveries, about 100%, a higher repeatability than reference methods and a good reproducibility (lower than 5%). The presence of conifer resin decreases the use of the immune system in wood ants.

Wood ants ( Formica paralugubris ) incorporate large amounts of solidified conifer resin into their nest, which reduces the density of many bacteria and fungi and protects the ants against some detrimental micro-organisms. By inducing an environment unfavourable to pathogens, the presence of resin may allow workers to reduce the use of their immune system. 2. Acyl-homoserine lactone production is more common among plant-associated Pseudomonas spp. than among soilborne Pseudomonas spp.

ABSTRACT A total of 137 soilborne and plant-associated bacterial strains belonging to different Pseudomonas species were tested for their ability to synthesize N -acyl-homoserine lactones (NAHL). Fifty-four strains synthesized NAHL. Interestingly, NAHL production appears to be more common among plant-associated than among soilborne Pseudomonas spp. Indeed, 40% of the analyzed Pseudomonas syringae strains produced NAHL which were identified most often as the short-chain NAHL, N -hexanoyl- l -homoserine lactone, N -(3-oxo-hexanoyl)-homoserine lactone, and N -(3-oxo-octanoyl)- l -homoserine lactone (no absolute correlation between genomospecies of P. syringae and their ability to produce NAHL …

Leaching of diuron and oryzalin in undisturbed lysimeters of three vineyard soils (Vosne-Romanée, 21)

La mobilité du diuron et de l'oryzalin a été étudiée en colonnes de sol non perturbé au laboratoire. Les sols étudiés sont trois sols viticoles de la région Bourgogne (Vosne-Romanée, 21) et ont été prélevés selon une topolithoséquence. Leurs teneurs en carbone organique sont respectivement de 1,2 %, 1,7 % et 2,2 % pour le sol brun calcaire de mi-pente (SBC MP), le sol brun calcaire de bas de pente (SBC BP) et la rendzine. Après une hauteur de pluie simulée de 845 mm, les percolats respectifs de la rendzine, du SBC MP et du SBC BP contiennent des quantités plus importantes de diuron (3,2 %, 11,8 % et 18,8 %), que d'oryzalin (0,2 %, 4,9 % et 3,7 % des quantités appliquées).
