Introduction. Osteoarthritis is considered a complex biopsychosocial condition, with consequences for the patient, the family, society and public health. Age is considered the main risk factor in the occurrence of osteoarthritis. Studies show that 2 out of 3 obese individuals associate knee osteoarthritis whereas the incidence of the latter increases at the same time with increasing body mass index. Background and Aims Patients with systemic sclerosis (SSc) often complain reduced capacity at submaximal exercise; conversely, physical capacity in performing daily duties has never been measured in SSc. The aim of this study is to evaluate this performance and its correlates, in patients with SSc compared with healthy controls, in a free-living setting. Abstract Vitamin D deficiency is common and widespread globally. Vitamin D has an immunomodulatory effect, but it is still unclear whether its deficiency is associated with higher disease activity. The aim of this retrospective study was to determine the serum concentration of vitamin D in children with paediatric arthritis (juvenile idiopathic arthritis and reactive arthritis). Prevalence of hypo-vitaminosis D among 98 children with juvenile idiopathic arthritis and reactive arthritis was determined and association between serum concentration of vitamin D and disease activity markers was found. The Dynamics of Aroma Release during the Consumption of Candies with Different Structures

This chapter aims at investigating the role of candy texture on the dynamics of aroma release using dynamic instrumental and sensory methods. The highest in vivo release, monitored using proton transfer reaction mass spectrometry (PTR-MS), was obtained for the 2% gelatin sample for all aroma compounds. The temporal dominance of sensations (TDS) method highlighted that the dominant sensation for the liquid product was the “strawberry” note. Role of aroma–matrix interactions on perception of structured emulsions

The impact of the composition of spreads on in vivo aroma release and aroma perception was investigated using online proton transfer reaction mass spectrometry (PTR-MS) and sensory methodologies. Consumption of model products spread on bread induced a significant increase in aroma release and better discrimination in aroma perception, compared to when the product was tasted pure from a spoon. Dynamic release of a series of 10 aroma compounds was slower with the increase in solid fat content, and the quantity decreased when proteins were added. Sensory ranking of model products mostly confirmed the release results.
