Background Obesity and diabetes became a grooving problem in both adults and children. Many hypotheses concerned agents involved in the excessive weight gain process and it’s consequences. Not only genetic or environmental factors, but also intestinal microbiome seems to play a role in the pathophysiology of this phenomenon. Use of selected autochthonous lactic acid bacteria for Spanish-style table olive fermentation

The present work presents a successful attempt to achieve an enhanced and more predictable fermentation process in Spanish-style green olive technology by selection and use of autochthonous starter cultures. Cadmium-induced changes in soil biochemical characteristics of oat (Avena sativa L.) rhizosphere during early growth stages

A microcosm was assembled to physically separate soil from roots and was used to study both the impact of living roots on the soil–plant system during early stages of growth and plant responses to abiotic stress. Oat (Avena sativa L.) seedlings were grown in the microcosm unit for 44 days. Twenty-three days after planting, 0.154 mg CdSO4/g dry soil was added. Plants grown in Cd-treated microcosms showed considerable inhibition of shoot growth rates, and leaf chlorophyll content. Soil microbial biomass C and respiration increased with plant age, and most of the measured biochemical indicators decreased with increasing distance from the soil–root interface, thus demonstrating the rhizosphere …

Urania basin in the deep Mediterranean Sea houses a lake that is &gt;100 m deep, devoid of oxygen, 6 times more saline than seawater, and has very high levels of methane and particularly sulfide (up to 16 mM), making it among the most sulfidic water bodies on Earth. Microbial contamination of milk and dairy products from restaurants in Spain

This study was carried out to evaluate the microbiological quality of milk and some dairy products, including 95 lots of warm milk, 95 lots of milk conserved at room temperature, and 75 lots of dairy products collected from restaurants in Spain. According to the European microbiological criteria (92/46/EEC, 93/43/EEC, and Commission Regulation No. 2073/2005), 31% and 35% of the total examined lots exceed the adopted limits of mesophilic aerobic counts and Enterobacteriaceae, respectively. The focus of this study was to evaluate the microbial quality of Spanish potato omelette and cooked meat samples including pork loin, chicken croquettes, long pork sausage, chicken breast, and meatballs from University restaurants. Microbiological analyses of Spanish potato omelette and cooked meat samples resulted in aerobic plate counts from1.00 to 2.90 and from1.00 to 6.04 log10 CFU g(-1), respectively. The objective of this study was to assess the antimicrobial effectiveness of chitosonium acetate films on the growth of Listeria monocytogenes, Salmonella spp. and Staphylococcus aureus. The samples were tested in both laboratory conditions using Tryptone Soy Broth (TSB) and in a real food system using fish soup.
