In food matrices, where starch is often used as a gelling or texturing agent, the occurrence of amylose-aroma complexes and their effect on the release of aroma compounds are difficult to determine. Indeed, thick or gelled systems are known to reduce the diffusion rate of flavor molecules, resulting in an increase of retention. Moreover, interactions between aroma compounds and matrix components might increase the retention of aroma compounds. The complexing behavior of three aroma compounds with amylose was studied by DSC and X-ray diffraction to determine the relative importance of these two factors. Abstract The processes of hyaluronan (HYA) drying and hydration were studied using differential scanning calorimetry. In the first approach the isoconversional Kissinger–Akahita–Sunose (KAS) method was applied in order to determine actual activation energies of evaporation of pure water and water from concentrated HYA solutions. Since the evaporation is a single-step process, the activation energies for pure water provided results consistent with tabulated values of evaporation enthalpies. In the course of water evaporation from hyaluronan solution a break in increasing enthalpy followed by a decrease below 0.34 g of water per 1 g of HYA was observed. Abstract Two commercial magnesium stearate powders in two well-characterised structural states are investigated using DSC and coupled TGA–DTA under dry nitrogen flow. They consist of either a mixture of crystalline hydrates or a poorly crystallised so-called anhydrate. Following the degassing of unbound water, 1 or 3 weight-loss peaks are observed below about 100 °C, each associated with one heat loss peak at the same temperature. The present results and a review of graphical data from literature show that the so-called anhydrate always contains a significant amount of water. Abstract The group of mixed crystals of general formula: [4-APyH][SbCl4(1−x) Br4x] with x ranging from 0 to 1 was studied by means of differential scanning calorimetry, dilatometry and dielectric spectroscopy. The ferroelectric properties are preserved for mixed crystals with replacement fraction, x, less than 0.30. Moreover, such a substitution of the chlorine atoms by the bromine ones significantly lowers the temperature of the structural phase transition shifting it from 240 K for pure [4-APyH][SbCl4] to about 185 K for the mixed crystals richer in bromine. Abstract The melting points of anhydrous 1-O-α- d -glucopyranosyl- d -mannitol, 1-O-α- d -glucopyranosyl- d -mannitol dihydrate and a new compound, 1-O-α- d -glucopyranosyl- d -mannitol-ethanol (2/1) were determined using differential scanning calorimetry. The melting onset values were 169.2 (3), 104.3 (18) and 158.7 (9), respectively, and the melting peak values were 171.4 (5), 107.9 (15) and 160.1 (6), respectively. 1-O-α- d -glucopyranosyl- d -mannitol dihydrate and 1-O-α- d -glucopyranosyl- d -mannitol-ethanol (2/1) decompose to anhydrous form when heated at slow heating rates. Abstract The possibility that the stacked DNA bases can mediate vectorial electron transfer has been examined using two different approaches. Experiments on photoinduced electron transfer with intercalated donors and acceptors (either randomly bound or linked dyads of ruthenium complex and viologen) indicate that while DNA may be a better medium than acetonitrile for electron transfer over short distances (2-3-base pair, equivalent to 10-14Å centre-to-centre separation), it is a poor medium for transport over larger separations. The Cathedral of Palermo was built by the Norman Kings, in the place where a mosque had been erected by the muslim governors of Sicily. The church has many features recalling the norman churches in northern France and in England, whilst some others are due to the contamination of norman, muslim and byzantine culture, that is peculiar of the so-called “arab-norman” architecture of medieval Sicily. In the XVIth century the Cathedral has been enriched by additions that did not affect its medieval features: a portico and a sacristy on the southern front, a sculptural decoration in the main apse. Abstract Low moisture baked products were investigated with a view to characterising the effect of both formulation and humidity on their physical stability. At the end of the baking process, the samples were in the amorphous state as a result of starch gelatinization and sugar melting. Their thermal properties were analyzed with differential scanning calorimetry and their glass transitions were studied. The DSC thermograms were thoroughly studied through a Gaussian deconvolution of the first derivative of their heat flow.
