Abstract Background Aside from the fully licensed herbal medicines there are products on the European pharmaceutical market which are registered by virtue of their longstanding traditional use. The normal registration procedure does not apply to them because presently they do not meet the legal requirements for a full license as set out in the relevant European Union Directive. Recent studies of the brain in various subfields have shown that memory is really a type of re-creation—piecing together many elements stored separately. Memory, creativity and their connections have been focal points in cognitive studies of music, but seldom have they been approached from the vantage point of music in oral tradition, which is the primary mode of transmitting music in the world. This paper argues that the oral transmission of music provides a fertile ground for learning about memory and creativity and their connections. Traditional Sicilian cheeses are manufactured in small size farms with raw milk from animals of indigenous breeds and without the addition of starter cultures. In order to transform milk into cheese, the presence of lactic acid bacteria (LAB) is required. The main sources of desirable LAB are generally the milk, the rennet, the equipment used during processing and the dairy environment. Food labels are the main method to ensure that consumers are appropriately informed as regards the food they consume. In Europe, the provision of food information to consumers is regulated by specific laws, including (i) the European Regulation (EU) no 1169/2011, which regulates the mandatory food information including a list of mandatory particulars and nutritional declarations and (ii) the European Regulation (CE) no 1924/2006, concerning the voluntary nutrition and health claims (NHC) made on foods.
