Effect of red wine soaking on the microbiological profile, total phenolic content and sensory aspects of an ovine pressed cheese

The aim of this study was to produce an ovine pressed cheese with high polyphenol content. To this purpose, fresh Primosale Pecorino cheese was soaked for seven days in Nero d’Avola wine (NDW) and was indicated as experimental cheese production (EP). The final cheese was characterized for its microbiological, chemical and sensory characteristics. Specifically, cheese making was performed with pasteurized ewes’ milk and a commercial starter culture. Control cheese production (CP) did not include the soaking phase in NDW. Natural food products are becoming increasingly popular worldwide due to their health and environmental benefits. However, these products' increasing anecdotal popularity has not translated into their widespread adoption; in fact, demand for natural food products remains confined to a relatively small segment of consumers. EFFECT OF WATER ACTIVITY ON CRISPNESS OF BREAKFAST CEREALS

Three breakfast cereals (two commercial products and one experimental product made by extrusion cooking) were placed over 10 saturated salt solutions in desiccators for 3 weeks and then studied by sensory and mechanical analysis. A slight decrease of sensory crispness intensity occurs between 0 and 0.50 (aw) or 7% (water content), after which there is a very rapid decrease. The value of critical water activity given by the intersection between the two straight lines which can be adjusted seems not to depend on the product. Rolling or Scrolling? The Effect of Content Type on Habitual Use of Facebook

The paper investigates how content type (i.e., hedonic and utilitarian content) is related to satisfaction, habitual use, use intensity and discontinued use intentions in the context of social media services. The research model was empirically tested using a survey study (n = 142) that was conducted among Facebook users. The results show that hedonic content is a strong predictor of habitual use of and satisfaction with Facebook. In turn, utilitarian content has a positive effect on satisfaction; however, it does not significantly affect habitual use. Simple Summary The Cinisara is a Sicilian breed raised on pasture to produce the Caciocavallo Palermitano cheese. Even if it is penalized by competition with meat breeds, characterized by higher growth rate and yield, the production of fresh meat represents a considerable added value for the smallfarms. The meat of Cinisara is not appreciated, despite having a high content of iron, vitamin E, conjugated linoleic acid (CLA), and low content of lipids and cholesterol, above all due to incorrect management of the supply chain phases that negatively affects the quality of the final product. First pollen-based REVEALS reconstruction of vegetation abundance in Europe for five time windows between 6k years BP and present

The submitted dataset includes the pollen-based REVEALS estimates of 11 plant functional types (PFTs) and 3 land-cover types (LCTs) for Europe, published in Trondman et al. (2015) as part of the results from the Swedish project LandClim I (Gaillard et al., 2010). In this project, pollen-based REVEALS estimates of land cover for 5 time windows of the Holocene were used to evaluate the scenarios of anthropogenic land-cover change (ALCC) KK and HYDE (Kaplan et al., 2017) and to study the biogeophysical forcing of ALCC between the time windows 6200-5700 years BP and CE 1600-1850 (Strandberg et al., 2014). By-products of farmed European sea bass (Dicentrarchus labrax L.) as a potential source of n-3 PUFA

Total by-products (TBP) obtained by filleting farmed and wild European sea bass (Dicentrarchus labrax) were analyzed to evaluate if, on the basis of the percentage yield, total lipid content and fatty acid composition, they can be considered a resource of n-3 polyunsaturated fatty acids (PUFA). Results show that TBP from intensively farmed fish (IFF) contain higher total lipid content and have a higher level of n-3 PUFA rich in eicosapentaenoic (EPA) and docosaexaenoic acid (DHA), compared to extensively farmed fish (EFF) and to wild fish (WF) (P < 0.05). This difference may suggest a way of promotion of TBP from IFF sea bass through the n-3 PUFA recovery by extraction.

The potential effects of three modern extraction technologies (cold-pressing, microwaves and subcritical fluids) on the recovery of oil from Chaenomelessinensis (Thouin) Koehne seeds have been evaluated and compared to those of conventional chemical extraction methods (Soxhlet extraction). This oil contains unsaturated fatty acids and polyphenols. Subcritical fluid extraction (SbFE) provided the highest yield—25.79 g oil/100 g dry seeds—of the three methods. On the influence of the physico-chemical properties of aerosols on the life cycle of radiation fogs

A one-dimensional model of radiation fog with detailed microphysics is presented. Aerosols and cloud droplets are treated in a joint two-dimensional size distribution. Radiative fluxes are calculated as functions of the radiative properties of the time-dependent particle spectra. The droplet growth equation is solved by considering radiative effects. Turbulence is treated by means of a higher order closure model. The interaction between the atmosphere and the earth's surface is explicitly simulated. Rainfall timing and runoff: The influence of the criterion for rain event separation

Abstract Rain is not uniform in time and space in semiarid areas and its distribution is very important for the runoff process. Hydrological studies usually divide rainfall into events. However, defining rain events is complicated, and rain characteristics vary depending on how the events are delimited. Choosing a minimum inter-event time (MIT) is a commonly used criterion.
