Nutrient sensing: What can we learn from different tastes about the nutrient contents in today's foods?

Abstract Tastes are often described as having a nutrient-signaling function eliciting expectations about the food and its nutrient content. The objectives of this work was to investigate correlations between taste intensity and nutrient content, to evaluate the impact of competing tastes on these relationships, and to know if the content in certain nutrients could be inferred from a combination of tastes. The Food Taste Database (Martin et al., 2014) and a French Food Composition table (ANSES-Ciqual) were used to obtain a dataset combining sensory and nutritional information for 365 foods. Latent profile analysis (LPA) is a person-centered method commonly used in organizational research to identify homogeneous subpopulations of employees within a heterogeneous population. However, in the case of nested data structures, such as employees nested in work departments, multilevel techniques are needed. Multilevel LPA (MLPA) enables adequate modeling of subpopulations in hierarchical data sets. Self-tracking is increasingly popular in recreational sport. Leisure sports practitioners use wearable devices that are connected to online platforms to record, analyse, and share their exercise data. While doing that they interact with a digital system, with themselves, and with peers. This paper examines social-communicative aspects of self-tracking, and the support that these aspects and their associated practices may provide for physical activity behaviour. I study the emergence of traditional online activities of the museums and their fears in the vivid and multifaceted Internet and how the open Internet is setting out to compete with museums. The second main topic of this work is the role of technology in the openness of digital heritage.
