Background  To validate a self-administered 20-item short questionnaire (SQ) for classifying individuals according to their intake of total fat, saturated (SFA), monounsaturated (MUFA), and polyunsaturated fatty acids (PUFA), as well as cholesterol. Methods  The SQ was sent to a randomly selected subsample of 300 participants of the European Prospective Investigation into Cancer and Nutrition (EPIC) in Heidelberg. The SQ was sent back by 244 participants (52.5% women, 47.5% men). Intake of total fat, SFA, MUFA, PUFA, and cholesterol was calculated from a 148-item food frequency questionnaire (FFQ). In vivo sodium release and saltiness perception in solid lipoprotein matrices. 2. Impact of oral parameters

This study aimed to investigate the relationships between sodium release, saltiness, and oral parameters during the eating of lipoprotein matrices (LPM). Sodium release and saltiness relative to 10 LPM were recorded during normal mastication by five subjects with differing oral parameters (chewing efficiency and salivary flow rate). The LPM samples varied in composition (dry matter, fat, salt, and pH levels) and represented a broad range of hardness. Mastication was recorded using electromyography simultaneously with sensory assessment. Combined heterogeneous distribution of salt and aroma in food enhances salt perception

Aroma–taste interactions and heterogeneous spatial distribution of tastants were used as strategies for taste enhancement. This study investigated the combination of these two strategies through the effect of heterogeneous salt and aroma distribution on saltiness enhancement and consumer liking for hot snacks. We evaluated whether low-fat milk enriched with PS improves cardiovascular risk factors in these patients. Comparing the results of a cholesterol and saturated fat screener when using two different scores.

Screener are useful instruments for categorising individuals according to their nutrient intake. To accurately classify the individuals it is important to correctly analyse the screener. Therefore we compared a simple and a weighed score of a cholesterol and saturated fat (SF) screener with the cholesterol and SF intake, respectively, calculated from an extensive food frequency questionnaire. The validation results did not change when a weighed score was used instead of the simple one, indicating that a simple score does not introduce a higher amount of misclassification.
