Effects of xanthan gum and calcium ascorbate treatments on color and nutritional quality of fresh cut pear fruit

2023

Edible coatings may be used to extend the shelf life of fresh-cut fruit products by controlling respiration and transpiration reducing overall quality decay. In this study, the effects of xanthan gum, combined with calcium ascorbate treatment, on color and nutritional quality of fresh-cut pear fruit were investigated. Fresh-cut pear fruit were processed with dipping for 4 different treatments: 2% xanthan gum solution with 2% calcium ascorbate (XAC); 2% xanthan gum solution (XAN); 2% ascorbate calcium solution (CAL) and distilled water for control (CTR). Fruit treated were stored at 5°C for 3, 5, 7 and 10 days. At each storage period, visual quality and flavor score, ascorbic acid and phenol…

Consumer Assessment on Sensory Attributes of Fresh Table Grapes Cv 'Italia' and 'Red Globe' after Long Cold Storage Treatment

2017

The impact of research that is being carried out into the relationship between food and consumers is progressively reinforced by continuous findings in literature confirming that consumers choose foods basing on their functional cognition and sensory perception, especially when buying fruit and vegetables. Therefore, it is important for table grape producers to be aware of consumers' concerns and preferences both, during the purchasing stage and after, during consumption at home, when experiential attributes have more importance. In both cases, sensory attributes play an important role in determining consumers’ purchase behavior of table grape. Table grapes cv ‘Italia’ and ‘Red Globe’ are p…

Effect of Vibration on the Quality of Strawberry Fruits Caused by Simulated Transport

2016

Mechanical damage of agricultural products is one of the main problems in the harvest and postharvest chain due to the large economic loss that the shelf life reduction could generate. Measurements of change in the chemical components of highly perishable products and microbial growth under different static and dynamic loads is the first step in the development of intelligent logistic units that could help in predicting the residual shelf life in order to minimize losses along the supply chain. In our research, the effects of vibration along the supply chain of a case study were analyzed on strawberry (Fragaria x ananassa) and woodland strawberry (Fragaria vesca) in terms of microbiological…

Pomological and quality traits of mulberry (Morus spp.) germplasm from Gorno Badakhshan in the Western Pamir

2017

The local fruit biodiversity can represent a good opportunity to maintain the agriculture and to develop economies in "marginal" territory such as those in the mountain rural areas. The genetic diversity of the Morus spp. is little known in the Western Pamir mountains, so that the objective of the present study was to improve the knowledge of the polymorphism of the species in the different poorly explored Tajik valleys by investigating the main quantitative and qualitative traits. Materials and methods - Six selected sites of the Gorno Badakhshan Autonomous Oblast (GBAO) region were investigated through field measurement on morphological traits of mulberry trees (both from wild and cultiva…

SENSORY EVALUATION AND SUITABILITY FOR FRESH-CUT PRODUCE OF WHITE PEACH [PRUNUS PERSICA (L.) BATSCH] 'SETTEMBRINA DI BIVONA'

2015

‘Settembrina di Bivona’ peaches were cut into slices to assess their suitability as fresh-cut produce. Untreated (control) and treated with calcium lactate fresh cut slices were closed in plastic boxes for 24 hours (T1) or five days of storage (T2) at 5°C, and then placed at 20°C to assess consumers’ liking. Soluble solids content, titratable acidity, firmness and pH were measured. A sample of n = 750 consumers was selected taking into consideration three variables: age (from 25 to 55 years old), professional status (employed) and aptitude to buy fresh-cut fruit for personal use. A systematic sampling was used, with a detection point based in a properly selected supermarket during t…

Physicochemical, Nutraceutical and Sensory Traits of Six Papaya (Carica papaya L.) Cultivars Grown in Greenhouse Conditions in the Mediterranean Clim…

2020

Six papaya (Carica papaya L.) cultivars, grown in a Mediterranean climate under greenhouse conditions, were screened for physicochemical properties, antioxidant capacity, nutritional and sensory characteristics. The fruits, harvested with more than 50% of yellow surface (between 60% and 77%) were tested for carotenoids content, phenolic content, reducing activity (ABTS) and cellular antioxidant activity (CAA50). The physicochemical traits were measured in terms of the titratable acidity and soluble content whereas proximal composition along with moisture, fats, total sugar, ash, vitamin A, C and E content. Moreover, the sensory profile was analyzed by a semi-trained panel. Although the six …

Effects of plant type on two strawberry cultivars in Siciliy

2014

In Sicily fresh plants have for years been replacing the once popular cold-stored ones. Good early cropping is the aim of all strawberry growers in the island s Marsala district. The present trial tested the response of the new strawberry cultivars Sabrosa and Florida Fortuna using fresh plug and bare-root plants. Florida Fortuna plug-plants turned out to be the most promising type as a cash crop in delivering extra early ripening.

Effects of Tray-Drying on the Physicochemical, Microbiological, Proximate, and Sensory Properties of White- and Red-Fleshed Loquat (Eriobotrya Japoni…

2022

Loquat fruits, highly valued by consumers for their characteristic aroma and pleasant taste, have a short post-harvest life and are susceptible to mechanical damage, loss of firmness, and initial organoleptic characteristics. The aim of this work was to develop a drying method suitable for storing loquat fruits in polyamide/polyethylene (PA/PE) bags containing two gaseous mixtures (treatments): MAPN2 (100% N2) and MAPP (21% O2 and 0.04% CO2), at room temperature (20 ± 1 °C) for at least 2 months. The effects of these conditions on the physico-chemical, microbiological, proximate, and sensory properties of fruit stored over a 50-day time interval were studied. The results showed that convect…

UPDATE ON THE SICILIAN STRAWBERRY BREEDING PROJECT

2014

The strawberry industry in Sicily differs from that of Italy’s other southern regions since the particularly warm winter weather results in earlier fruit ripening. Cultivar choice is thus of key importance for the success of Sicily’s strawberry industry. The old cultivar Tudla®Milsei has recently been replaced by cultivars ‘Florida Fortuna’, ‘Florida Festival’, ‘Sabrosa®Candonga’, ‘Naiad®Civl35’ and ‘Nora’ developed by both public and private breeding programs in Florida, Spain and Italy. The strawberry breeding program in Sicily started about 20 years ago in an effort to develop new cultivars well adapted to an area of very low winter chilling, with requirements featuring superior performa…
