Abstract The influence of sodium chloride on the water holding capacity of meat is well known and described in literature. An increase in water holding capacity is associated with an increase in the swelling pressure in the protein matrix. A novel device was used to measure the swelling pressure during brine salting of muscle cylinders (40 × 50 mm), in different NaCl brine concentrations (2.5 to 25%) over 6 days at 4 °C. Worldwide, horse meat production is led by Asia, leaving Europe in third place. Simple Summary The Cinisara is a Sicilian breed raised on pasture to produce the Caciocavallo Palermitano cheese. Even if it is penalized by competition with meat breeds, characterized by higher growth rate and yield, the production of fresh meat represents a considerable added value for the smallfarms. Background a number of nutrients have been found to be associated with better muscle strength and mass; however, the role of the whole diet on muscle strength and mass remains still unknown. Objective to examine whether the healthy Nordic diet predicts muscle strength, and mass 10 years later among men and women. Methods about 1,072 participants belong to the Helsinki Birth Cohort Study, born 1934–44. Diet was assessed with a validated food-frequency questionnaire during 2001–04.
