Enhancement of structural, functional and antioxidant properties of fish gelatin films using Maillard reactions

International audience; This study investigates the effect of Maillard reactions (MR) on the physico-chemical and biological properties of fish gelatin based edible films. Glucose was incorporated in gelatin film forming solutions at different glucose/lysine molar ratios: 0.5/1.0, 1.0/1.0 and 5.0/1.0. The MR was then induced by heating films at 90 °C for 24 h in dry conditions. Color changes and browning index measurements were used to pursue the MR kinetic. Results showed that the development of MR products was dependent on the glucose content and on the reaction time. Experimental studies on carbon nanotubes and graphene functionalized via physical adsorption with cellulose and avidin

In this Thesis I have experimentally studied structural, electronic, and optical properties of hybrids of nanocarbon materials, carbon nanotubes (CNT) and graphene, and certain biomacromolecules. The latter are especially xylan, a type of hemicellulose, and avidin, an important protein. Complexes of CNT with hemicellulose are attractive because the hybrid material is soluble in water. The conductive transport properties of thin films of CNT /hemicellulose have been systematically studied with different experimental tools. How the unbanked cope with financial exclusion: Evidence from Pakistan

This article investigates both the coping strategies employed by low-income unbanked consumers in Pakistan and the consequences of those strategies. Qualitative data were gathered from low-income unbanked consumers through in-depth interviews. The findings suggest that unbanked consumers utilize their respective social networks and various market and personal resources to cope with financial exclusion. Parenthood and gender inequality : Population-based evidence on the child penalty in Finland

This study presents evidence on the effect of parenthood on labor market outcomes in Finland. We use population-based data drawn from administrative registers and an event study design centered around the birth of the first child using the specification proposed in Kleven et al. (2019b). The study confirms that women encounter large short- and long-term child penalties in gross labor earnings and that penalties are associated with employment participation. Taxes and social security transfers considerably reduce the child penalty, which also varies by the number of children. peerReviewed

Quantitative Runge Approximation and Inverse Problems

In this short note we provide a quantitative version of the classical Runge approximation property for second order elliptic operators. This relies on quantitative unique continuation results and duality arguments. We show that these estimates are essentially optimal. As a model application we provide a new proof of the result from \cite{F07}, \cite{AK12} on stability for the Calder\'on problem with local data.
