Questo lavoro propone l’analisi e un tentativo di definizione, non esaustiva, di uno dei piatti più diffusi, e al tempo stesso più difficili da collocare nella gastronomia siciliana, la “minestra”. La pietanza rappresenta, sia da un punto di vista semiotico e lessicale, sia da un punto di vista storico, una specificità delle cucine italiane che non sembra avere analoghi, se non in sistemi alimentari culturalmente limitrofi come quello provenzale. This work aims to analyze the traditional agricultural technique of the Giardino Pantesco, typical of the isle of Pantelleria (Sicily, Italy). With this particular technique a single citrus tree is encircled by a drywall of volcanic rocks allowing it to grow even in the island's unfavorable meteorological conditions. This technique has been analyzed by placing one instrumental array inside the Giardino and one outside and by measuring different environmental variables. Olive tree (Olea europaea L) represents one of the most important evergreen tree species. In Sicily agroforestry systems based on the olive tree, named traditional olive orchard, are common and often are grown together to other tree crops, such as vineyards, or with cereals or forages. The biofilms of 12 wooden vats used for the production of the traditional stretched cheeses Caciocavallo Palermitano and PDO Vastedda della valle del Belìce were investigated. Salmonella spp. and Listeria monocytogenes were never detected. Total coliforms were at low numbers with Escherichia coli found only in three vats. Coagulase-positive staphylococci (CPS) were below the enumeration limit, whereas lactic acid bacteria (LAB) dominated the surfaces of all vats. In general, the dominance was showed by coccus LAB.
