Influence of polysaccharides on wine protein aggregation.

Abstract Polysaccharides are the major high-molecular weight components of wines. In contrast, proteins occur only in small amounts in wine, but contribute to haze formation. The detailed mechanism of aggregation of these proteins, especially in combination with other wine components, remains unclear. This study demonstrates the different aggregation behavior between a buffer and a model wine system by dynamic light scattering. Arabinogalactan-protein, for example, shows an increased aggregation in the model wine system, while in the buffer system a reducing effect is observed. Abstract The use of pseudo-cereals for wheat products making is to fortify the deficiency of nutritional value in wheat flour. However rich in proteins plant additives could increase acrylamide content in baked products. The present study was focused on acrylamide reduction in wheat flour biscuits supplemented with lupine and defatted flaxseed flour treated by solid state (SSF) and submerged (SMF) fermentations by Lactobacillus sakei , Pediococcus pentosaceus and Pediococcus acidilactici strains. Pistachio nuts are worldwide appreciated for their chemical and organoleptic profiles. There are several studies on the influence of irrigation on pistachio productivity, whereas there are little available data on the influence on nut quality. In this study we characterized some qualitative traits of pistachio nuts cultivar Bianca in Mediterranean environment and how plant water status affected them. ; We investigated the role of both candy texture and eating technique (melting or chewing) on the dynamics of aroma release. One novelty of this type of analysis was the simultaneous application of instrumental and sensory analysis. Four candy textures were established based on their storage modulus at 1 Hz by varying the gelatine content between 0 and 15% w/w. Abstract In this study, 80 commercial samples of bread loaves were purchased from different supermarkets located in Valencia (Spain). These samples were investigated for the presence of legislated and non-legislated mycotoxins. Results showed that samples were contaminated with Aflatoxins (AFs), Zearalenone (ZEA) and Enniatins (ENs) with a frequency of 20, 96, and 65% respectively. Aflatoxin B1 (AFB1), Aflatoxin B2 (AFB2) and Aflatoxin G1 (AFG1) were detected with concentrations ranged from 0.5 to 7.1 μg/kg. Abstract A study on a set of cereal and cereal-based products (n = 117) intended for infant consumption was performed to determine the natural presence of twenty different mycotoxins by both liquid chromatography and gas chromatography coupled to tandem mass spectrometry (MS/MS). Analytical data showed that 67% of analyzed samples were contaminated by at least one mycotoxin at variable levels. Deoxynivalenol presented the highest incidence (38%) and reached a maximum level of 240 ng/g in a bsissa sample (oat product), higher than the maximum level set for DON in cereal products (200 ng/g).
