Food colour additives of natural origin

2015

Abstract Colour is an often overlooked sensory character that certainly influences flavour perception. Pigments colouring food are generally unstable and are modified during processing. To maintain or restore product colour uniformity, colouring agents, considered worldwide as food additives, are intentionally added to food products. The natural food additives market has been growing extensively since the last century due to the potential hazards of artificial food additives and the potential benefits of biologically active compounds. In this chapter, a fairly compressed overview of the most important colours of natural origin as well as information about less common or/and promising colour…

2017

The underwater archaeological campaigns carried out over twenty years, from 1970 to 1990, in the Saône valley, more particularly in the area of Chalon-sur-Saône, first by Louis Bonnamour and then by Annie Dumont, generated a considerable quantity of data concerning settlements, located on fjords or river banks. This documentation, stored at the Musée Denon in Chalon-sur-Saône, was the subject of new studies, initiated by Jean-Michel Treffort for the Ouroux-sur-Saône “Marnay” site and continued by Franck Ducreux, notably for the Chalon-sur-Saône “le gué des Piles” site. On this occasion most of the sites of the region having yielded protohistoric assemblages were reconsidered. This article p…

Science and law in the time of cholera: the mystery of the biscuits in Torroja (1865)

2018

By focussing on a case of collective poisoning in 1865, four features of forensic cultures are analysed: technologies for detection, authorized voices, regulations in action and the predominant social anxieties. Local newspapers and archival documents kept in the medical academies of Barcelona and Madrid are analysed. The analysis shows the tensions between various types of proof employed in legal medicine and the ambiguities between epidemic diseases and poisoning accidents. In the first section, I review the fears caused by the cholera epidemic in 1865, which was the first explanation of the accident. The changes of popular perception are also discussed by analysing contemporary newspaper…

Dix ans d'archéologie forestière dans le Châtillonnais (Côte-d'Or) : enclos, habitats, parcellaires

2010

Theoretical space-time modelling of the diffusion of raw materials and manufactured objects

2013

International audience; Workgroup 3 of ArchaeDyn II programme focuses its study on the diffusion systems of ancient products. In order to be able to structure data in GIS in an appropriate way, we propose a general theoretical modelling integrating the different components of the diffusion systems, and identifying their interactions and the factors affecting the location of products and their transfers. Three dimensions are considered: the Time, the Space and the Function of places. A product's pathway can be apprehended efficiently by distinguishing spatial entities as well as functional entities. This modelling highlights the fact that the approach through the simple notion of "site" is n…

Reconstruction of human subsistence and husbandry strategies from the Iberian Early Neolithic: A stable isotope approach

2018

Objectives The Early Neolithic involved an important social and economic shift that can be tested not only with the material culture, but also through biomolecular approaches. The Iberian Peninsula presents few Early Neolithic sites where fauna and humans can be analyzed together from an isotopic perspective. Here we present an isotopic study on the site of Cueva de Chaves as an example for understanding the dietary and economical changes that took place during Early Neolithic in Iberia. Material and methods Here we apply carbon and nitrogen stable isotope analysis to bone collagen from 4 humans and 64 faunal samples from 14 different species. The large dataset belongs to the same unique ch…

Two stelae with lateral decoration of the Museum of Langres: new study

2015
