Les caractéristiques aromatiques du caramel industriel utilisé dans les préparations, par exemple les laitages, est en passe d’être révélée par des chercheurs de l’UMR CSGA en partenariat avec l’entreprise Nigay, spécialisée dans la fabrication de caramels aromatiques et colorants. La « flaveur » est le terme utilisé par les spécialistes pour caractériser à la fois l’ensemble des odeurs (détectées par le nez) et des saveurs (détectées par la langue : sucré, salé, amer…) d’un aliment.

Pulse legumes (pea, lentil, faba bean) are excellent source of proteins (20-30% db), dietary fibers (10-30%), and starch (40-55%). The formulation of gluten-free extruded snacks made entirely from pulse legumes is an interesting way to introduce legumes to young people. Due to the reactivity of protein components under thermomechanical treatment, extrusion can produce cellular structures with various texture and starch-protein composite morphology. Introduction: Diets of young children in many European countries are not ideal (too many lipids; not enough fruit and vegetables). Early nutrition may have an impact on health in later life (diabetes, obesity, heart problems) and the first two years of life are of crucial importance in the acquisition of food habits. Chocolates classification according to their volatile compounds fingerprints measured by PTR-ToF-MS

Dark chocolates develop several organoleptic characteristics depending on cocoa origin, cocoa variety and fabrication process. These parameters influence the chemical composition of the chocolates, and among other components volatile organic compounds (VOCs) responsible for aroma mainly determine their sensory perception. Sensory evaluation is able to discriminate chocolates with various organoleptic properties. Proton Transfer Reaction Mass Spectrometry (PTR-MS) is capable of monitoring VOCs released in foodstuffs headspace at ppb level in real time.
