T@sty est un dispositif permettant d'évaluer la sensibilité de sujets humains pour les cinq saveurs (sucrée, salée, amère, acide et savoureux). Cette évaluation peut-être réalisée à domicile (tests envoyés par la poste, questionnaire de réponse en ligne). Pour chaque saveur, un kit d'évaluation est constitué de 3 feuilles-tests entièrement comestibles. Chaque feuille-test comporte 6 séries de 3 disques détachables. Pour chacune des séries, les participants doivent goûter les trois disques par simple contact avec la langue, puis identifier le disque qui porte une saveur (les deux autres sont neutres). Green and Quick Extraction of Stable Biophenol-Rich Red Extracts from Grape Processing Waste

The extraction of grape processing waste (wine pomace) via microwave-hydrodiffusion and gravity (MHG) from three different cultivars grown in Sicily (Syrah, Perricone and Nero d’Avola) rapidly affords aqueous extracts highly concentrated in valued biophenols including flavonoids, anthocyanins and phenolic acids. The method does not employ organic solvent, acid or base and does not require grinding or freeze drying of the wine pomace nor separation of the grape skins from seeds and stem. Differential memory persistence of odor mixture and components in newborn rabbits: competition between the whole and its parts

Interacting with the mother during the daily nursing, newborn rabbits experience her body odour cues. In particular, the mammary pheromone (MP) contained in rabbit milk triggers the typical behaviour which helps to localize and seize the nipples. It also promotes the very rapid appetitive learning of simple or complex stimuli (odorants or mixtures) through associative conditioning. Sterol oxidation in ready-to-eat infant foods during storage.

The effect of storage on sterol oxidation of ready-to-eat infant foods was evaluated. Two different flavor (honey -LH- or fruits-LF-) liquid infant foods, prepared with milk and cereals, were stored for 0, 2, 4, 7 and 9 months, at 25ºC. Sterol oxidation products (SOP) were extracted by cold saponification, purified by silica solid-phase and analyzed by gas chromatography (GC) and GC-mass spectrometry. -sitosterol was the most representative sterol, followed by cholesterol and campesterol. Aims: This study aimed at acquiring knowledge on the evolution of anthocyanins from grape to wine and the possibility of deducing the varietal origin of a wine from its anthocyanin profile. Methods and results: The anthocyanin “fingerprints”, or profiles, of a series of autochthonous Sicilian accessions and in the respective young wines were determined by HPLC-DAD in 2008. This paper reports the results of a study on the ambiguous behaviour of substances with lmax at 280 nm in the determination of total flavonoids in whole grape skin extracts made from a hydroalcoholic SO2-rich solvent, apparently not eluted with methanol after absorption on a C18 cartridge employed for sample pre-concentration and SO2 removal. After rejecting the hypothesis that they were irreversibly absorbed on the C18 cartridge, it seemed that they reacted with other phenolics during passage through the C18 cartridge and were totally eluted with methanol in this new combined form. The composition and the stability to oxidative reactions of Italian extra virgin olive oils, in relation to olive varieties and ripeness, have been studied. Nutritional quality has been evaluated comparing nutrient contents with the recommended daily intake for the Italian population.
