Drying is one of the most common preservation methods used to extend the shelf life of fruits and vegetables by reducing water content so as to prevent the growth and reproduction of microorganisms and to inactivate many of the moisture-mediated alterative reactions. Goji berries are mainly consumed dried. Several methods can be used to dry goji berries, such as sun drying, hot air drying, vacuum drying, and freeze drying. European and Italian legislation have banned use of growth promoters in livestock since 1988, but epidemiological data show that anabolic drugs are still being used illegally. Recent surveys carried out on the cattle farms in Northern Italy have confirmed the presence of growthpromoting hormones. Vacuum impregnation is considered a cold formulation technology since it allows the incorporation of a desired functional compound into porous plant tissue without applying any heat. It is widely used in combination with the drying process to obtain added-value snacks. The aim of the present study was to investigate the potential of high-pressure processing (HPP) (600 MPa during 5 min) on emerging mycotoxins, enniatin A (ENNA), enniatin A1 (ENNA1), enniatin B (ENNB), enniatin B1 (ENNB1) reduction in different juice/milk models, and to compare it with the effect of a traditional thermal treatment (HT) (90 °C during 21 s).
