The beneficial properties of mushrooms bioactive compounds indicate their potential use as performance enhancing natural additive for livestock animals. This paper reports the preliminary results of a research on the effects of diets supplemented with fungus myceliated grains (FMG) to lactating ewes in terms of intestinal parasites control, milk production and cheese oxidative stability. During 8 weeks, 21 ewes were divided into 3 groups fed with hay ad libitum and 1.3 kg/day per head of one of 3 concentrates with 0, 10 or 20% of FMG. Abstract The present work was carried out to evaluate the microbiological and physicochemical composition of salamis produced with the meat of beef, horse, wild boar and pork. Salami productions occurred under controlled laboratory conditions to exclude butchery environmental contaminations, without the addition of nitrate and nitrite. All trials were monitored during the ripening (13 °C and 90% relative humidity) extended until 45 d. The nutritional effects of sulla (Hedysarum coronarium L.) forage containing condensed tannins (CT) on growth of lambs, and carcass and meat quality were investigated. Thirty-two male Comisana lambs aged 100 ± 8 days weighing 19.0 ± 2.8 kg were fed fresh forage of sulla or CT-free annual ryegrass (Lolium multiflorum Lam. subsp. Wersterwoldicum) for 49 days until slaughter; in addition, each lamb was supplied with 200 g/days of concentrate.
