Regulation of hdc expression and HDC activity by enological factors in lactic acid bacteria.

Aims:  The aim of this work was to study the influence of enological factors on the histidine decarboxylase gene (hdc) expression and on histidine decarboxylase enzyme (HDC) activity in Lactobacillus hilgardii, Pediococcus parvulus and Oenococcus oeni. Methods and Results:  Cell extracts and whole cells were used. Glucose, fructose, malic acid and citric acid diminished the hdc expression. Ethanol did not increase hdc expression or activity in cells, but increased HDC activity. Temperature and pH had effect on the activity of HDC but not on hdc expression. Molecular Characterization of a Variant of Bacillus anthracis-Specific Phage AP50 with Improved Bacteriolytic Activity▿ †

ABSTRACT The genome sequence of a Bacillus anthracis -specific clear plaque mutant phage, AP50c, contains 31 open reading frames spanning 14,398 bp, has two mutations compared to wild-type AP50t, and has a colinear genome architecture highly similar to that of gram-positive Tectiviridae phages. Spontaneous AP50c-resistant B. anthracis mutants exhibit a mucoid colony phenotype.

Microbial dynamics during green Sicilian table olive fermentations

The production of green table olives is traditionally a spontaneous fermentation carried out by indigenous microflora. Variability of microbial raw material may result in changes in the qualitative aspects of final products (Silvestri et al., 2009). Table olives of five different green table olive cultivars (four Sicilian Brandofino, Castriciana, Nocellara del Belice and Passalunara and the Spanish Manzanilla) were produced according to a semi-industrial technology, in which lactic acid bacteria (LAB) role is partially replaced by lactic acid addiction. Hydrodistillation of the flowers (BpFl) of and fruits (BpFr) of Bupleurum fontanesii Guss. ex Caruel gave two oils that were analyzed by GC and GC-MS. The main components were α-elemol (16.7%), caryophyllene oxide (16.4%) and heptacosane (15.9%) in BpFl, and spathulenol (16.8%), caryophylladienol I (13.2%) and α-elemol (12.8%) in BpFr. A good antimicrobial activity against several microorganisms, including Bacillus subtilis, Staphylococcus aureus, Fusarium oxysporum and Aspergillus niger, all infesting historical art craft, was also determined.
