Almond by-products: Extraction and characterization of phenolic compounds and evaluation of their potential use in composite dough with wheat flour

2018

Blanched skins and blanching water, by-products of almond processing, were evaluated as potential ingredients of bakery products. The research included three phases: i) optimization of skin drying; ii) optimization of quali-quantitative determination of phenolic compounds, by comparing three extracting protocols; iii) assessment of the impact of by-products on the rheology of composite meals with wheat flour. Besides being less time-consuming, drying at 60 °C for 30 min lowered effectively skin moisture (7.86 g/100 g) and kept better odor notes (leafy and rancid odor scored 6.1 and 0.2, respectively), as well as higher content of phenolics (813.89 µg/g, with the most effective extracting me…

POMOLOGICAL TRAITS, SENSORY CHARACTERISTICS, AND ANTIOXIDANT ACTIVITY IN FRUITS OF NINE LOQUAT CULTIVARS GROWN IN SICILY

2015

Loquat cultivation in Italy currently aims at offering a wider choice of cultivars to growers. The present study determined commercial quality, characterized the antioxidant capacity, and quantified the major bioactive compounds of some local ('BRT 20', 'Claudia', 'Nespolone di Trabia', 'Sanfilippara') and international ('Algerie', 'El Buenet', 'Bueno', 'Golden Nugget' and 'Peluche') cultivars. Fruit was harvested at commercial ripening and chemical-physical determinations of weight, diameters, skin and flesh color, soluble solid content, tritable acidity, antioxidant activity and polyphenol content, and sensory analyses were carried out. Data showed a large variability among genotypes and …

Conventional, non-conventional extraction techniques and new strategies for the recovery of bioactive compounds from plant material for human nutriti…

2019

Considering a large number of variations in the chemical structures of bioactive compounds (BACs) that are valuable to humans and a large number of their sources, it is necessary to build a standard and integrated extraction and analytical approaches for obtaining these compounds. From this perspective, the main purpose of this Special Issue of Food Research International was to publish research related to the extractions with data about isolation of BACs from plant matrices for human nutrition. This Special Issue includes both, conventional and innovative extraction techniques, highlighting their characteristics and advantages in relation to the target matrix. Many of presented works conta…

Chemical reduction of the mycotoxin beauvericin using allyl isothiocyanate.

2011

Abstract Beauvericin (BEA) is a bioactive compound produced by the secondary metabolism of several Fusarium strains and known to have various biological activities. This study investigated the reduction of BEA present in the concentration of 25 mg/kg on a solution model (phosphate buffer saline at pH 4 and 7) and in wheat flour using allyl isothiocyanate (AITC) as a reactant. The concentration of the mycotoxin studied was evaluated using liquid chromatography coupled to the diode array detector (LC-DAD), whereas adducts formed between the BEA and AITC were examined by liquid chromatography coupled to mass spectrometry-linear ion trap (LC-MS-LIT). In solution, BEA reduction ranged from 20% t…

Use of concentrated fruit juice extracts to improve the antioxidant properties in a soft drink formulation

2023

Three juices obtained respectively from pomegranate, prickly pear and orange fruit were separately concentrated using an innovative technique, that allow to obtain a final product with high content of bioactive compounds and elevate antioxidant activity. The concentrated juices were employed in the formulation of a soft drink to improve its bioactive properties. Despite a low amount of each concentrated juice was used, the experimental soft drink obtained evidenced a high content of total polyphenols. The antioxidant activity detected was similar to that of tea commonly considered a healthy beverage with strong radical scavenging activity. The sensory analysis of the soft drink showed a con…

Influence of different soluble dietary fibers on the bioaccessibility of the minor Fusarium mycotoxin beauvericin.

2011

Abstract Beauvericin (BEA) is a bioactive compound produced by the secondary metabolism of several Fusarium strains and is known to have various biological activities. This study investigated the bioaccessibility of the BEA tested in concentrations of 5 and 25 mg/L, in a model solution and in wheat crispy breads elaborated with different natural binding compounds as the soluble alimentary dietary fibers β-1,3 glucan, chitosan low molecular weight (L.M.W.), chitosan medium molecular weight (M.M.W.), fructooligosaccharides (FOS), galattomannan, inulin and pectin, added at concentrations of 1% and 5%. The bioaccessibility was determinated by employing a simulated gastrointestinal digestion tha…

Nanoencapsulation of promising bioactive compounds to improve their absorption, stability, functionality and the appearance of the final food products

2021

The design of functional foods has grown recently as an answer to rising consumers’ concerns and demands for natural, nutritional and healthy food products. Nanoencapsulation is a technique based on enclosing a bioactive compound (BAC) in liquid, solid or gaseous states within a matrix or inert material for preserving the coated substance (food or flavor molecules/ingredients). Nanoencapsulation can improve stability of BACs, improving the regulation of their release at physiologically active sites. Regarding materials for food and nutraceutical applications, the most used are carbohydrate-, protein- or lipid-based alternatives such as chitosan, peptide–chitosan and β-lactoglobulin nanopart…
