Cellulose ether emulsions as fat source in cocoa creams: Thermorheological properties (flow and viscoelasticity)

Flow behaviour and viscoelastic properties at three different temperatures (20, 45 and 70 °C) of cocoa filling creams have been studied. These creams were composed of cocoa, starch, sugar, skimmed milk powder and non-digestible cellulose ether emulsions as fat source. Two types of methylcelluloses, MC, and two types of hydroxypropyl methylcelluloses, HPMC, with different chemical substitution degrees were employed. This study describes the properties of thermoplastic polymer composites based on polyethylene (of low and high density) and ethylene-propylene copolymers using various types of conifer needles (pine, spruce, fir, and cedar) as fillers. For the needles, thermogravimetric analysis (TGA) and TGA/Fourier transform infrared spectroscopy (TGA/FTIR) were performed to investigate their structures and thermal resistance, as required for the composite processing methods. International audience; Commercial soybean inoculants processed with sterilised peat and stored at 20 °C for 1–8 years were used as experimental materials to assess the changes in the physiological activity of Bradyrhizobium japonicum after storage. Viable counts decreased and physiological characteristics of the bacterium changed during storage, with an increase in the time taken for colony appearance on a medium without yeast extract, an increase in the lag time for nodule appearance on soybean grown in glass tubes and a decrease in survival on seeds. Concerns have been raised about the possibility of the negative impact of transgenic crops on the environment. If wild plants accidentally pick up transgenes through pollen exchange with genetically modified crops, they could gain new environmental advantages or conversely suffer genetic homogenization and loss of biodiversity. This could cause weeds that might create new problems in farmers' fields and wild habitats and change biological equilibriums. Characterization of kefir-like beverages produced from vegetable juices

The aim of this work was to develop new non-dairy fermented beverages using vegetable juices as fermentable substrates. Carrot, fennel, melon, onion, tomato and strawberry juices underwent back-slopping fermentations, carried out by water kefir microorganisms. Results indicated that lactic acid bacteria and yeasts were capable of growing in the juices tested. Melon juice registered the highest numbers of microorganisms. Almost all juices underwent a lactic fermentation. After fermentation, there was observance of a decrease of the soluble solid content and an increase of the number of volatile organic compounds.
