Le botulisme est une maladie neurologique humaine et animale, le plus souvent d’origine alimentaire, provoquée par l’action de neurotoxines bactériennes (toxines botuliques) produites par la bactérie Clostridium botulinum et qui se manifeste par une paralysie flasque pouvant aller jusqu’à la paralysie respiratoire et l’arrêt cardiaque. Piles of animal bones from large domesticates – cattle and horses – have been identified on various settlement sites in Gaul ; these have undergone practices readily distinguishable from domestic butchery. Already perceptible on rural sites, these indications of a special butchery regime for cattle become more and more apparent elsewhere in tandem with the increasingly urbanised character of settlements. Cattle was also sacrificed during the Iron Age at sanctuaries, but only a small proportion of the meat produced was consumed in banquets held on site. Bovine tuberculosis is an infectious disease caused by Mycobacterium bovis. This disease affects cattle, and many species of domestic and wild mammals, and humans. The circulation of the bacteria in various multi-host systems promotes the maintenance of the disease and the contamination of cattle in the vicinity. Beside direct transmission of the bacteria through the respiratory route, indirect transmission, through inhalation or ingestion of environmental matrices contaminated by an infected animal excretory, is suspected in several countries.
