El volumen, editado por José Manuel De Bernardo Ares, catedrático de Historia moderna de la Universidad de Córdoba, incluye los trabajos que fueron expuestos y debatidos en las V Jornadas de Historia “Cardenal Portocarrero”, que se celebró en el 2009 en Palma del Río (Córdoba) en ocasión del tercer centenario de la muerte del cardenal Luis Fernández Portocarrero. El volumen se divide en dos grandes partes: la primera trata ampliamente de la biografía personal y de las redes familiares y clientelares de Portocarrero; la segunda se centra en las influencias que las decisiones tomadas entre los siglos XVII y XVIII tuvieron en la cultura, en la sociedad, en la política y en la economía.

A selective and sensitive procedure has been developed and validated for the determination of acrylamide in difficult matrices, such as coffee and chocolate. The proposed method includes pressurised fluid extraction (PFE) with acetonitrile, florisil clean-up purification inside the PFE extraction cell and detection by liquid chromatography (LC) coupled to atmospheric pressure ionisation in positive mode tandem mass spectrometry (APCI-MS-MS). Antioxidant properties of polyphenol-rich cocoa products industrially processed

Fermentation and roasting are the main causes of polyphenol degradation during the process for obtaining cocoa products. In the present study, a process for obtaining polyphenol-rich cocoa products on an industrial scale is described. The process avoids the fermentation and roasting steps and includes a step for the inactivation of the enzyme Polyphenol Oxidase (PPO), which helps preserve the polyphenol content present in the raw cocoa bean.
