La consistenza del patrimonio caprino in Italia ha subito negliiltimi anni un aumento considerevole. Significativo è stato l’incremento del 6,6% della produzione di latte tra il 2000 e il 2002. Il recente sviluppo dell’allevamento caprino è dovuto in gran parte al crescente interesse dei consumatoru sia verso i prodotti caseari tipici sia verso il consumo diretto del latte. INTRODUZIONE I numerosi studi sui polimorfismi lattoproteici della capra hanno evidenziato per il gene che codifica per l’alfa (s1)-caseina (CSN1S1) 17 alleli: A, B1, B2, B3, B4, C, D, E, F, G, O1, O2, H, I, L, M, N. Tali alleli sono stati associati a differenti tassi di sintesi di caseina e classificati in quattro gruppi quantitativi: alleli forti (A, B1, B2, B3, B4, C, H, L, M) intermedi (E ed I) e deboli (D, F e G) che sintetizzano rispettivamente un alto (circa 3,5 g/l), medio (circa 1,1 g/l), e basso (0,45 g/l) quantitativo di alfa (s1)-caseina, più alleli nulli (01, 02 e N) che non sintetizzano alfa (s1)-caseina (1, 2). Toxicity of the extracellular products ofVibrio damsela isolated from diseased fish

In this work we analyzed the pathogenic in vivo and in vitro activities for both fish and mammals of extracellular products (ECP) of several isolates of Vibrio damsela implicated in disease problems in marine culture. The ECP from all the strains were strongly lethal for fish (LD50 ranging from 0.06 to 3.7 μg protein/g fish) and mice (LD50 ranging from 0.02 to 0.43 μg protein/g mouse), causing death between 4 and 72 h after inoculation. These ECP samples possessed low proteolytic activity without production of caseinase, gelatinase, or elastase. Probiotic properties of Brevibacillus brevis and its influence on sea bass (Dicentrarchus labrax) larval rearing

Efficacy of Brevibacillus brevis strain and its influence on larval rearing of sea bass (Dicentrarchus labrax) were investigated in the present work. Biochemical analyses permit to identify this strain as B. brevis. This bacterium has an inhibitory effect against fish pathogenic bacteria, especially the genus of Vibrio. Enzymatic characterization revealed that B. brevis was lipase positive, amylase, lecithinase and caseinase negative. Adherence assays to abiotic surfaces and challenge test with Artemia larvae demonstrate that B. brevis was fairly adherent and play an important role in the enhancement of the protection of Artemia culture against pathogens. Importance and efficiency of in-depth antimicrobial activity for the control of listeria development with nisin-incorporated sodium caseinate films

Abstract The effect of antimicrobial sodium caseinate-based films was investigated on inhibition of Listeria innocua in cheese. Nisin was incorporated into sorbitol-plasticized sodium caseinate films at 1000 IU/cm2 and the films were prepared by casting methods. Mini red Babybel® cheese was chosen as a semi-soft cheese model. The antimicrobial activity was studied based on the contact between antimicrobial films and surface-contaminated as well as in-depth contaminated cheese samples during a 7-day storage at 4 °C.
