Entrepreneurship of an institutional field: the emergence of coworking spaces for digital business model

AbstractCoworking spaces have been proliferating world-wide in urban and rural areas while facilitating entrepreneurship and new, especially digital business models. Our research analyzes the worldwide expansion by drawing upon mechanisms from institutional theory. We argue that the sense of community, emotional activation, the local communities together with the digital linkages and the open office allowed coworking spaces to evolve as a real space for entrepreneurship. Biomagnification of organohalogens in Atlantic salmon (Salmo salar) from its main prey species in three areas of the Baltic Sea

Abstract Factors affecting the biomagnification of organohalogens in Baltic salmon from sprat, herring and three-spined stickleback were assessed in three feeding areas. Second sea-year salmon contained (in fresh weight of whole fish) 79–250 ng g− 1 polychlorinated biphenyls (ΣPCB), 0.9–2.7 pg g− 1 dibenzo-p-dioxins (ΣPCDD), 8–19 pg g− 1 dibenzofurans (ΣPCDF), 96–246 pg g− 1 coplanar PCBs, 2.4–3.6 ng g− 1 polybrominated diphenylethers (ΣPBDE), and 39–136 ng g− 1 Σindicator PCB6. Effect of red wine soaking on the microbiological profile, total phenolic content and sensory aspects of an ovine pressed cheese

The aim of this study was to produce an ovine pressed cheese with high polyphenol content. To this purpose, fresh Primosale Pecorino cheese was soaked for seven days in Nero d’Avola wine (NDW) and was indicated as experimental cheese production (EP). The final cheese was characterized for its microbiological, chemical and sensory characteristics. Specifically, cheese making was performed with pasteurized ewes’ milk and a commercial starter culture. Control cheese production (CP) did not include the soaking phase in NDW.
