Cooking influence on physico-chemical fruit characteristics of eggplant (Solanum melongena L.)

Physico-chemical traits of three eggplant genotypes ("Tunisina", "Buia" and "L 305") were evaluated before and after two cooking treatments (grilling and boiling). Different genotypes revealed different changes after cooking, with "Tunisina" showing a better retention of phytochemicals with respect to other two genotypes. The main physical phenomena were water loss during grilling, and dry matter loss after boiling. Chlorogenic acid, the main phenolic in eggplant, resulted higher in grilled samples, while delphinidin glycosides resulted more retained in boiled samples. Biothiols, taurine, and flavonols, as well as tocopherols and carotenoids have been assessed in the edible pulp of Sicilian red (Sanguigna), yellow (Surfarina), and white (Muscaredda) cultivars of cactus pear. The yellow cultivar has the highest level of reduced glutathione (GSH, 8.1 +/- 0.78 mg/100 g pulp), whereas the white cultivar showed the highest amount of cysteine (1.21 +/- 0.12 mg/100 g pulp). Taurine accounted for 11.7 +/- 1.0 mg/100 g in the yellow pulp, while lower levels were measured in the others. Thermal and Chemical Stability of Thiol Bonding on Gold Nanostars

The stability of thiol bonding on the surface of star-shaped gold nanoparticles was studied as a function of temperature in water and in a set of biologically relevant conditions. The stability was evaluated by monitoring the release of a model fluorescent dye, Bodipy-thiol (BDP-SH), from gold nanostars (GNSs) cocoated with poly(ethylene glycol) thiol (PEG-SH). The increase in the BDP-SH fluorescence emission, quenched when bound to the GNSs, was exploited to this purpose. A maximum 15% dye release in aqueous solution was found when the bulk temperature of gold nanostars solutions was increased to T = 42 °C, the maximum physiological temperature. Early Neolithic diet and animal husbandry: stable isotope evidence from three Linearbandkeramik (LBK) sites in Central Germany

Abstract The first appearance of the Neolithic Linearbandkeramik (LBK) in Central Germany occurred during the 6th millennium BC. However, though LBK sites are abundant in the German loess areas, there are only a few studies that reconstruct the diet of these first farmers using biochemical methods. Here we present the largest study undertaken to date on LBK material using stable isotope analysis of carbon and nitrogen to reconstruct human diet and animal husbandry strategies. We analyzed the bone collagen of 97 human individuals and 45 associated animals from the sites of Derenburg, Halberstadt and Karsdorf in the Middle Elbe–Saale region of Central Germany. Illuminating Intcal During the Younger Dryas

As the worldwide standard for radiocarbon (14C) dating over the past ca. 50,000 years, the International Calibration Curve (IntCal) is continuously improving towards higher resolution and replication. Tree-ring-based 14C measurements provide absolute dating throughout most of the Holocene, although high-precision data are limited for the Younger Dryas interval and farther back in time. Though numerous analyses have been made of Holocene pollen sequences, they come from similar environmental contexts, mainly peat deposits. Land snails can provide good palaeoecological and palaeoclimatical data in different drier environmental settings. The Verrieres deposits, located in the Seine Valley, southeast of Paris, provide rich and abundant malacofaunas. We compare the well–defined local biostratigraphy with other mollusc stratigraphies from Burgundy, the closet site to the studied region. This study is focused on the characterisation of typical salami produced in Alessandria province (North West of Italy). Seventeen small or medium salami producers from this area were involved in the study and provided the samples investigated. The aim is double and consists in obtaining a screening of the characteristics of different products and following their evolution along ripening.
