Chemical and physico‐chemical changes during the dry‐cured processing of deer loin

The changes on chemical composition, physico‐chemical parameters, free fatty acids and free amino acids content of dry‐cured deer loin were investigated at day 0, 30 and 60 of dry‐cured process. On the whole, except for pH values (≈5.6) and composition (fat: 4.6–5.2%; protein: ≈73%; ash: ≈17.5%) that did not show differences between the processing days, the other physico‐chemical parameters were affected by curing process. Colour parameters and moisture (from 69 to 38.4%) decreased while the hardness increase from 12.35 to 342 N and lipid oxidation (from 0.2 to 0.52 mg MDA/kg) increased as dry‐cured stage progresses. Total lipids content and fatty acid composition of seed oils from six pomegranate cultivars

The fatty acid composition of the seed oils of six pomegranate (Punica granatum L) cultivars was qualitatively and quantitatively determined by gas chromatography. The seeds contained oil in the range 51-152 mg kg -1 dry matter. Intervarietal differences in fatty acid composition were demonstrated (fatty acid esters as % (w/w) total fatty acid esters. Sour varieties had the highest while sour-sweet varieties had the lowest oil content. Eleven fatty acids were identified. In all varieties, the predominant fatty acids were linoleic (25.2-38.6%) and oleic acid (24.8-35.5%) followed by palmitic (18.2-22.6%), stearic (6.9-10.4%) and linolenic acid (0.6-9.9%). Effect of traditional, microwave and industrial cooking on inositol phosphate content in beans, chickpeas and lentils

An high-performance liquid chromatography method for determining inositol phosphate fractions was adapted to legumes. The validity of the method was assessed by estimating the following analytical parameters: linearity (linear response between 125 and 5000 microg inositol hexaphosphate (IP(6))/ml); instrumental precision and method precision (relative standard deviation, %) were 1.9% (IP(6)) for instrumental, and 2.5% (IP(6)) and 8.2% (IP(5)) for method precision. The Influence of (2-Chloroethyl)trimethylammoniumchloride (CCC) on Growth and Photosynthetic Metabolism of Young Wheat Plants (Triticum aestivum L.)

Summary The influence of (2-chloroethyl)trimethylammoniumchloride on growth and cell metabolism of Triticum aestivum var. Kolibri was investigated. CCC was added to the nutrient solution on the 11th day of development with a final concentration of 10 −2 mol·1 −1 . It immediately stopped root growth and showed a strong inhibitory influence on the growth of the leaves. Smaller and fewer cells accounted for the reduction in final leaf size of about 40 %. The content of soluble proteins and soluble reducing sugars were significantly increased in the treated leaves. Localization and Activity of Naphthylamidases in Germinating Seeds of Scots Pine, Pinus sylvestris

Extracts prepared from endosperms of germinating seeds of Scots pine, Pinus sylvestris L., rapidly hydrolysed the β-naphthylamides of L-phenylalanine and L-leucine optimally at pH 6.5 and that of L-arginine at pH 7.7. Disc electrophoresis followed by activity staining showed that the activities were due to two naphthylamidases (aminopeptidases) with different substrate specificities. Seeds were allowed to germinate at 20°C on agar gel in the dark and the activities on the three substrates were assayed from separated endosperms and seedlings at various stages of germination. The Effect of Light on the Growth of Pea Plants and the Subsequent Influence in Shikimate Oxidoreductase (EC 1.1.1.25) Activity

Summary Pea plants were cultured in white light, red and far red light, and in the dark during a period of three weeks. At several states of development we investigated the activity of the enzyme shikimate oxidoreductase, the amount of fresh and dry matter, and the contents of protein in stem, leaves, cotyledons, and roots. The enzyme activity was found to be distributed organ-specifically and uninfluenced by the phytochrome system, but it was significantly depressed in plants grown in the dark compared to plants grown in white light. Changes in ewe milk fatty acids following turning out to pasture

Abstract Ten Comisana dairy ewes were selected to observe time of changing in milk fatty acids as a result of switching from stall to pasture feeding. At first, ewes were subjected to a stall-feeding period of 30 days (pre-experimental phase). After which, ewes were abruptly turned out to a vetch and oats pasture as their sole feed (experimental phase). Individual milk samples were collected on experimental days 0 (the last day of stall feeding), 1–4, 8, 11, 17 and 23. Milk and feeds fatty acid composition was determined by gas chromatography. Identification of drying oils used in pictorial works of art by liquid chromatography of the 2-nitrophenylhydrazides derivatives of fatty acids.

A new HPLC-UV-Vis method for identification of drying oils from binding media or protective film used in pictorial works of art prior to conservation or restoration is proposed. Chromophore derivatization of fatty acids released by hydrolysis of structural drying oils is studied. The derivatization reagent selected was 2-nitrophenylhydrazine with 1-ethyl-3-(3-dimethyl animopropyl)carbodiimide hydrochloride/pyridine as catalyst.
