Bresaola made from Cinisara cattle: effect of muscle type and animal category on physicochemical and sensory traits

The physicochemical characteristics and sensory traits of Cinisara bresaola were investigated, to explore a new commercial opportunity for autochthonous dairy cattle farms. Semimembranosus, Semitendinosus and Biceps brachii muscles, from adult cows (AC) and grazing (GB) or housed (HB) young bulls of Cinisara breed, were processed to made bresaola. Differences due to animal category and muscle type were observed. Bresaola from AC was richer in fat and volatile organic compounds. Polycyclic aromatic hydrocarbons (PAHs) are contaminants of concern that impact every sphere of the environment. Despite several decades of research, their mechanisms of toxicity are still poorly understood. This study explores the mechanisms of cardiotoxicity of the three widespread model PAHs retene, pyrene and phenanthrene in the rainbow trout (Oncorhynchus mykiss) early life stages. Productivity of an Atriplex halimus shrubbery and effects of grazing on lambs

The objectives of this study were to 1) evaluate the productivity and forage quality of Atriplex halimus, 2) investigate modifications to shrub structure induced by grazing, and 3) assess live weight changes in lambs grazing on A. halimus with and without a feed supplement (wheat straw ± barley grain). The results showed that A. halimus had low productivity (approximately 1000 kg DM ha–1) but high tolerance to grazing by lambs, although minor modifications in plant structure due to grazing were observed. Colour assessment of milk and milk products using computer vision system and colorimeter

Abstract A computer vision system (CVS) and a colorimeter were compared for their abilities to measure the colour of twenty-seven different milks and milk products. The frequency of similarity test showed that CVS-generated colour chips were similar to the actual sample colour in all trials (100%). The CVS-obtained colours were found to be more similar to the colour of sample visualised on the monitor, compared with colorimeter-generated colour chips, with values of 83.3–100.0% depending on the milk product. The objective of this study was to investigate the main quality indicators of wastewater in a dairy factory located in Mureş County, with a water treatment plant built recently. The wastewater samples were tested for extractable matter, total suspended matter, fixed residue, biological oxygen demand, chemical oxygen demand, total suspended solids and pH values. The results indicated that pollution levels of wastewater samples tested were found high.
