Retention/release equilibrium of aroma compounds in fat-free dairy gels

BACKGROUND: The replacement of fat by thickeners in fat-free yoghurts leads to an important modification of aroma compound partitioning, with an impact on aroma perception. Investigation of retention/release equilibria allows a good understanding of aroma compound behaviour depending on food composition. Transfers of small analytes in a multiphasic stirred fruit yoghurt model

International audience; The transfer of small analytes in a multiphasic stirred fruit yoghurt model, made of a pectin gel aimed to mimic fruit pieces and of a dairy gel done with milk acidified by glucono-δ-lactone hydrolysis, have been studied. The concentration gradients between the pectin gel and the dairy gel were the driving force for the migration of small analytes (i.e. water, protons and colorants). Water migrated from the dairy to the pectin gel, causing modifications in the water content of both gels and an equilibration of their water activity at 0.938±0.003. Factors associated with milk urea concentrations in Girgentana goats

A total of 1,481 milk samples of 166 Girgentana goats, taken along the entire lactation, were utilised to evaluate the effect of non nutritional factors on milk urea (MU). Parity, stage of lactation and month of sampling significantly influenced MU, while no effect was found for born kids number. The first kidding goats produced lower MU than multiparous goats. Trend of MU was similar to milk production course with a peak found at 60 DIM. The different MU levels between several months of production are often linked to pasture chemical variations.

The Body Size of Headstarted and Wild Juvenile European Pond Turtles (<i>Emys orbicularis</i>)

Headstarting is a popular conservation technique in which animals are raised under artificial conditions, and then released into natural habitat. The objective of this procedure is to grow animals to a size at which they are less vulnerable to predators. However, there is still little empirical evidence for the long-term effectiveness of the technique. Therefore, we compared body size of juvenile «wild» (= not taken to artificial rearing) and headstarted European pond turtles ( Emys orbicularis ), from two populations (in central and western Poland). Wastewaters generated by agro-industrial operations often represent an unsustainable cost for farms due to high wastewater-treatment management costs. The wastewater produced by dairies, wineries or oil mills may vary in quantity and in quality depending on the time of the year, making the use of a conventional treatment system less efficient and more costly. Effect of weather conditions on somatic cell score in Sicilian Valle del Belice ewes

Mastitis susceptibility of Valle del Belice ewes from the south of Sicily to temperature, humidity, precipitation, solar radiation, sun hours, air pressure, wind-speed and wind-direction measured by a public weather station was investigated using 65,848 test-day somatic cell score (SCS) records of 5,237 ewes. All weather parameters had an effect on SCS in a regression approach. Extreme values of maximum and minimum temperaturehumidity indices resulted in increased SCS. Higher precipitation, solar radiation and sun hours resulted in increased SCS, whereas higher air pressure and wind speed resulted in reduced SCS.

Global warming affected increasing the risk of ducks to be more succeptable to heat stress which leads to decrease welfare and production. This research aimed to study duck welfare and productivity under probiotic and antioxidants administration at commercial farms. The method used was experiment with Completely Randomized Designed (CRD) based on factorial pattern.
