Pectin concentration, Molecular Weight and Degree of Esterification : Influence on Volatile Composition and Sensory Characteristics of Strawberry Jam

Composition of headspace, consistency, taste and flavor characteristics were determined in jams made with different pectins. At usual concentrations, high methoxylated pectin induced an undesirable modification of typical flavor and intensity of flavor and taste, whereas low methoxylated pectin induced few alterations. At fixed concentration and molecular weight, a decrease in degree of esterification produced a significant decrease in consistency and noticeable modifications of the flavor perception and headspace composition, but no taste alteration. Mechanical reduction of pectin molecular weight significantly modified only the consistency.

The projects prepared for "Palermo South-East" are the result of a Graduate Laboratory structured through meetings seminars specialist communications critical exhibitions which - in a shared strategy - saw each student elaborate their work in comparison with others actors of the same Laboratory. The research on "urban projects" was set so that each graduating student was made aware of the projects carried out in the same geographical area by the colleagues who had preceded it so as to be able to operate in continuity and contribute to formulating a unitary reasoning in which each project constituted continuation verification or even variant of the previous ones. These coordinated works have pursued two fundamental objectives: the strengthening of infrastructures and the establishment of specialized public buildings with superior functions aimed at requalifying and regenerating various critical situations with particular attention to the relationship between context and life scenarios. Thus each designer while dealing with a main functional program simultaneously deals with various issues such as the rationalization of the road system the redevelopment of existing buildings the design and refunctionalization of urban services (for example the transformed Central Station in the hotel or the project of a great Mosque)several degree theses have addressed as the main theme or as a question in the background the design of a new bed for the Oreto river and the relative establishment of a park facing it. The study aims to reflect on the training of future primary school teachers by starting from the use of the e-portfolio as an innovative tool to promote the acquisition of reflective and self-evaluation competence within the flipped classroom. The research involved 154 students of Primary Education Master’s Degree Course of the University of Palermo attending to the Docimology course during the academic year 2020/2021. This paper presents the theoretical assumptions objectives and operating methods of a path that made the use of the e-portfolio in flipped classroom to promote the development of docimological skills in higher education. The heterogeneity of inter-domain Internet application flows: entropic analysis and flow graph modelling

The growing popularity of the Internet has triggered the proliferation of various applications, which possess diverse communication patterns and user behaviour. In this paper, the heterogeneous characteristics of Internet applications and traffic are investigated from a complex network and entropic perspective. On the basis of real-life flow data collected from a public network provided by an Internet service provider, flow graphs are constructed for five types of applications as follows: Web, P2P Download, P2P Stream, Video Stream and Instant Messaging. Abstract Symbiosis is a key driver of evolutionary novelty and ecological diversity, but our understanding of how macroevolutionary processes originate extant symbiotic associations is still very incomplete. Cophylogenetic tools are used to assess the congruence between the phylogenies of two groups of organisms related by extant associations. Game of Thieves and WERW-Kpath: Two Novel Measures of Node and Edge Centrality for Mafia Networks

Real-world complex systems can be modeled as homogeneous or heterogeneous graphs composed by nodes connected by edges. The importance of nodes and edges is formally described by a set of measures called centralities which are typically studied for graphs of small size. The proliferation of digital collection of data has led to huge graphs with billions of nodes and edges. IR fingerprints of U(VI) nitrate monoamides complexes: a joint experimental and theoretical study.

Infrared spectra of 0.5 mol·L-1 uranium(VI) nitrate monoamide complexes in toluene have been recorded and compared with infrared spectra calculated by DFT. The investigated monoamides were N,N- dimethylformamide (DMF), N,N-dibutylformamide (DBF), and N,N- dicyclohexylformamide (DcHF). The validity of DFT calculations for describing uranium nitrate monoamide complexes has been confirmed as a fair agreement between experimental and calculated spectra was obtained. Furthermore, a topological analysis of the electron density has been carried out to characterize monoamide-uranium interactions. Volume change characteristics of fine-grained soils due to sequential thermo-mechanical stresses

Know-how of volume change characteristics, VCC, of the fine-grained soils, exposed to thermal stresses, is essential for design of various thermo-active structures. These stresses are known to induce excess pore-water pressure, Δu θ , in the saturated state of such soils, which in turn affects their compression and shear strength characteristics. When the smile is a cue to familiarity

International audience; The question discussed in the two following experiments concerns the effect of facial expressions on face recognition. Famous and unknown faces with neutral or smiling expression were presented for different inspection durations (15 ms vs 1000 ms). Subjects had to categorize these faces as famous or unknown (Experiment 1), or estimate their degree of familiarity on a rating scale (Experiment 2). Results showed that the smile increased ratings of familiarity for unfamiliar faces (Experiments 1 and 2) and for famous faces (Experiment 2).
