An integrated technological approach to the selection of lactic acid bacteria of flour origin for sourdough production

article i nfo Several lactic acid bacteria (LAB) were evaluated in situ for their potential in sourdough fermentation. The strains belonged to Lactobacillus plantarum, Lactobacillus sakei, Lactobacillus sanfranciscensis, Leuconostoc citreum, Leuconostoc mesenteroides, Leuconostoc pseudomesenteroides and Weissella cibaria. LAB were used, in individual inocula, to carry out the fermentation of γ-ray treated (sterile) flour and untreated commercial flour, in order to evaluate their performances both in the absence and presence of the native microbiota of flour. Chasing Shakespeare: The Impurity of the “Not Quite” in Norry Niven’s From Above and Abbas Kiarostami’s Where Is My Romeo

The essay situates the “not Shakespeare” of this volume within the theoretical problematics of the “post-textual.” It re-elaborates the “post-textual” as the uncanny re-appearance of Shakespeare in the form of heterogeneous fragments that are made to cohabit with various textual and media environments. These media products include a “Shakespeare” that is not quite Shakespeare, an “entity” that becomes the site of unceasing transactions (for instance, between an “outside” and an “inside,” between visibility and invisibility, between the “original” and its iteration) and multiple contaminations (through media, characters, and plays).

The present chapter examines Creed’s early career, particularly the artistic connection to his hometown as well as his peculiar conception of creativeness, for which Douglas Gordon emerges as an influential point of reference. This link to Glasgow has been widely overlooked by critics so far, who rather analyse Creed from a London-centred perspective. This essay focuses on the various forms of narrating, mediating, and interpreting selves within and around a book object, the novel S. (2013) by J. J. Abrams and Doug Dorst. The novel S. is an experiment in producing a deceivingly realistic replica of a maltreated library book object, but its discursive practices also rely on familiar literary forms, harking back to epistolary commonplaces, as well as to marginalia, both ancient and modern. Reuse of almond by-products: Functionalization of traditional semolina sourdough bread with almond skin

Almond production generates large amounts of by-products rich in polyphenols. In this study, almond skin was explored as a valuable food ingredient in bread making. To this purpose, almond skin was used to produce functional products modifying a traditional sourdough bread recipe. The doughs were prepared replacing semolina with powdered almond skin (PAS) at 5 and 10 % (w/w). Sourdough inoculum was started with a mix of lactic acid bacteria (LAB) and propagated in semolina until reaching pH 3.7. The pH of PAS added breads was higher than that of control (CTR) breads before and after fermentation. Combined approach for the investigation of dominant fermenting microbiota in two traditional sourdoughs produced in sicily

In order to explore the community of lactic acid bacteria (LAB) and yeasts present in two major typical Sicilian sourdoughs, seven mature sourdoughs for "Pane Nero di Castelvetrano" (CV1 - CV3 samples) and "Pane di Monreale" (MR1 - MR4 samples) were analysed through a culturedependent and culture-independent approach. The highest values of microbial counts were revealed in MR1 sourdough. In particular, LAB counts were at about 109 CFU/g in media specific for typical sourdough LAB, such as SDB and SFM, while levels of 106 CFU/g were registered for yeasts. In the present work the microbial dynamics in wheat kernels were evaluated over time. The main aim of this research was to study the resistance of lactic acid bacteria (LAB) and yeasts associated to unprocessed cereals used for bread making during long term conservation. To this purpose four Triticum durum Desf. genotypes including two modern varieties (Claudio and Simeto) and two Sicilian wheat landraces (Russello and Timilia) were analysed by a combined culture-independent and -dependent microbiological approach after one, two or three years from cultivation and threshing.
